3 lbs. – red potatoes
1 packet – seasoning mix
4 tbsp. – olive oil

Steps:

  • Preheat oven to 400 degrees (F). Wash potatoes and pat dry.
  • Cut potatoes lengthwise in half. Placing cut (flat) side down, cut each half lengthwise onto 4 or more wedges. Place in large bowl. Sprinkle seasoning mixture over potato wedges.
  • Sprinkle with olive oil and toss until evenly coated.
  • Place potatoes on a large baking sheet. Bake for 40 – 50 minutes, depending on the desired crispness.
  • Remove from the oven.
  • Cool before serving. Enjoy with your favorite sauce.

large russet potatoes, cut lengthwise and then into 3 wedges per half

Freshly ground black pepper

garlic powder

Italian seasoning

Ranch, for dipping

Steps:

  • Heat the oven to 400°. Place a cooling rack on a baking sheet, then spray with cooking spray. In a large bowl, whisk together salt, pepper, garlic powder, Italian seasoning, and Parmesan. Add potatoes, tossing wedges until fully coated.  Keeping as much cheese on each wedge as possible, wrap potatoes in bacon. Place bacon-wrapped potatoes on prepared rack, then bake, turning halfway through, until the bacon is cooked and potatoes are tender, about 35 minutes. Serve with ranch.
