2 packages (8 ounces each) cream cheese, softened
1/2 cup mayonnaise
1/3 cup grated Parmesan cheese
1/4 cup sliced green onions, optional
10 bacon strips, cooked and crumbled
Optional: Italian parsley sprigs and diced pimientos
Assorted crackers

Steps:

In a small bowl, beat the cream cheese, mayonnaise, Parmesan cheese and, if desired, onions. Stir in bacon. Cover and refrigerate for 1-2 hours., Invert a small bowl in the center of a serving platter. Drop cream cheese mixture by rounded tablespoonfuls around edge of bowl. Remove bowl. Smooth cream cheese mixture, forming a wreath. Garnish with parsley and pimientos if desired. Serve with crackers.

Ingredients

1 tbsp olive oil
3 leeks , thinly sliced
375g pack ready-rolled puff pastry
150g pack soft cheese with garlic and herbs
4 rashers streaky bacon , snipped
100g grated emmental

Steps:

Heat oven to 200C/180C fan/gas 6. Heat the oil in a frying pan, then gently fry the leeks until soft, about 5 mins. Cool. Unroll the pastry onto a baking sheet. Spread the soft cheese over the pastry to within 3cm of the edges. Scatter over the leeks, bacon and grated emmental.
Flip the edges of the pastry over the filling. Bake for 20 mins until golden.
