Ever wanted to make your own chicken stock from scratch? My simple recipe will yield two litres of liquid gold. Either use it straight away in your favourite recipe, else it’ll keep in your freezer for up to three months.

Yield Makes about 2L

Number Of Ingredients 7

4 garlic cloves
1 tsp black peppercorns
1 tsp vegetable oil
1 whole chicken
4 slices ginger
4 spring onions
1 tsp sea salt, or to taste

Steps:

  • Use a mortar and pestle to pound the garlic and peppercorns to a rough paste. Heat the vegetable oil in a large stock pot. Add the garlic paste and cook for a minute or until fragrant. Add the remaining ingredients. Then pour over enough water to cover the chicken (at least 2.5L if you can fit that amount into your pot). Place over high heat. Bring to a gentle simmer, then reduce the heat to low and simmer for 90 minutes. Skim the surface of the stock every so often. Taste the stock and season with salt to taste. Strain and use straight away or freeze for up to 3 months.

Basic Chinese chicken stock

Number Of Ingredients 4

one whole chicken ( ,around 2000g)
1 small chunk of ginger
4 scallions
2.5 L to 3L water

Steps:

  • Regular pot method: Add half of the scallion and ginger inside the chicken. Place all in ingredients in a large stockpot. Add the remaining scallion and ginger. Bring it to a boil over high heat and then slow down the fire to medium low fire. Cover the lid and simmer for 2 hours. strain the broth into individual containers and store them in the freezer for future use
  • High-pressure method: Add half of the scallion and ginger inside the chicken. Place all in ingredients in a large stockpot. Add the remaining scallion and ginger. Choose chicken stock or stock procedure. When well cooked, transfer the chicken out. Now, you can directly. Or re-heat the chicken stock to remove the extra water off and you will have more concentrated stock.
  • When cooled, there will be a layer of fat floating on the surface. If you are on a diet, you can remove it but it is better to keep it for a better flavor.

I hope this is what I am looking for. I guess you could add any number of things, chinese vegies, wontons, use it as an eggdrop soup base, whatever.
