Amish Breakfast Casserole - Can't Stay Out of the Kitchen image

Amish Breakfast Casserole is a fantastic entree for holiday breakfasts! This one uses 2 meats, 3 cheeses, hashbrowns, eggs and bell peppers. Amazing. Gluten free.

Number Of Ingredients 11

1 lb. sliced bacon (diced )
1 medium sweet onion (chopped)
6 large eggs (lightly beaten)
4 cups frozen hash browns (shredded, thawed)
2 cups cheddar cheese (shredded)
1 1/2 cups small curd cottage cheese
1 1/4 cups Swiss cheese (shredded)
1 lb. mild, bulk sausage
1/2 red bell pepper (diced)
1/2 green bell pepper (diced)
fresh, snipped chives (for garnish)

Steps:

  • In a large skillet, cook bacon and onion until bacon is crisp; drain.
  • In a separate skillet cook sausage and bell peppers.
  • In a very large mixing bowl, combine the remaining ingredients; stir in bacon mixture and sausage mixture.
  • Transfer to a greased 13-in. x 9-in. x 2-in. baking dish.
  • Bake, uncovered, at 350° for 35-40 minutes or until set and bubbly.
  • Let stand for 10 minutes before cutting.
