CHINESE ALMOND COOKIES RECIPE: HOW TO MAKE IT

Chinese Almond Cookies Recipe: How to Make It image

Each Christmas, my mother baked these Chinese almond cookies and stored them in clean coffee cans. When she passed away, I started giving our kids a can of these sentimental sweets. (Traditional Chinese almond cookies typically use lard, but butter is a great substitute if you don't have lard on hand.) —Jane Garing, Talladega, Alabama

GLUTEN-FREE ALMOND FLOUR CHOCOLATE CHIP COOKIES | ALLRECIPES

Gluten-Free Almond Flour Chocolate Chip Cookies | Allrecipes image

Almond flour is the secret ingredient in these crisp and tender chocolate chip cookies. For chewiest cookies, enjoy these warm from the oven. If you prefer them a bit crisp, wait until they've cooled before biting into one (or several). Store any remaining cookies at room temperature - a cookie jar keeps them handy!

Total Time 20 minutes

Prep Time 10 minutes

Cook Time 10 minutes

Yield 14 cookies

Number Of Ingredients 8

¼ cup brown sugar, light or dark
½ teaspoon baking soda
¼ teaspoon salt
2 tablespoons butter, at room temperature
2 teaspoons vanilla extract
1 large egg
2 cups King Arthur Almond Flour
½ cup chocolate chips

Steps:

  • Preheat the oven to 350 degrees F. Lightly grease a baking sheet, or line it with parchment.
  • Combine the brown sugar, baking soda, salt, and butter, and mix until smooth.
  • Mix in the vanilla, egg, and almond flour, stirring to combine. Scrape the bottom and sides of the bowl, then mix for 1 minute at medium speed.
  • Stir in the chocolate chips.
  • Scoop the dough one level tablespoon at a time onto the prepared baking sheet; a tablespoon cookie scoop works well here.
  • Gently flatten the cookies to about 3/8-inch thick.
  • Bake the cookies for 9 to 12 minutes, until golden brown.
  • Remove the cookies from the oven. Allow them to cool on the pan for 2 minutes, then carefully transfer them to a rack to cool completely.

CHOCOLATE AND ALMOND TIGER CAKE RECIPE - NYT COOKING
This almond cake is based on financiers, the small, usually ingot-shaped cakes first made in Paris in the late 1880s. The pastry chef Lasne created and named them for his stockbroker clients, keeping them easy and neat to eat on the run — no fuss, no muss. Made with egg whites, ground nuts and a lot of melted butter, the recipe is invitingly riffable. My favorite take is the tigré, a round, chocolate-speckled cake topped with a dab of ganache. Years ago, I misread the name, and I’ve called them tiger cakes ever since. My play on the tiger is a large cake, a little less rich than the original, run through with chopped chocolate and covered with enough ganache to leave telltale smudges. Stockbrokers beware.

  • If you’d like, make the topping: Put the cream in a small saucepan and bring just to a boil. Turn off the heat and add the chocolate. Gently stir the chocolate and cream together until blended, thick and shiny. Pour the ganache over the top of the cake and use an offset spatula or kitchen knife to spread it across the cake. Scatter over the toasted almonds. Either leave the cake on the counter to allow the ganache to set a bit (it will never be really firm) or refrigerate the cake for 15 minutes to set the chocolate. The cake is best at room temperature. Covered, it will keep for about 3 days at room temperature.
