Almond Bars Recipe: How to Make It - Taste of Home image

"This is one of my favorite recipes for last-minute school bake sales," writes Sandy Kerrison from her home in Lockport, New York. "The cake-like snacks are the first items to go...that is, if they're not grabbed by a teacher first. I also include them in Christmas cookie gift baskets."

Number Of Ingredients 6

4 eggs
2 cups sugar
1 cup butter, melted
2 cups all-purpose flour
2-1/2 teaspoons almond extract
Confectioners' sugar

Steps:

  • In a large bowl, beat the eggs and sugar until lemon-colored. Beat in butter and extract; gradually stir in the four and mix well. Spread into a greased 13x9-in. baking pan. , Bake at 325° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Sprinkle with confectioners' sugar.

2 cups sugar
1 cup margarine, melted
4 eggs
1/2 teaspoon baking powder
2 teaspoons almond extract
1 pinch salt
1/2 cup almonds, sliced
1 tablespoon sugar

Steps:

  • Preheat oven to 350°F.
  • Line a 9x13" pan with foil and grease with butter.
  • Blend together the flour, sugar, margarine, eggs, baking powder, almond extract and salt.
  • Pour into pan, and spread evenly.
  • Sprinkle with almonds and remaining tbsp of sugar.
  • Bake for 30-35 minutes, until golden.

  • Preheat oven to 375F. Grease an 8” or 9” pan with butter. Cream the butter with an electric mixer until light and fluffy. Add sugar and almond extract mix well. Add one yolk at a time and mix. Gradually, add in flour and 1/2 cup crushed sliced almonds until well blended. Take 1/2 the mixture of dough and spread it out evenly on the bottom of the greased pan. Let cool completely and cut into 21 or 42 bars.
