5 large eggs, beaten
1 tbsp. chopped chives, plus more for garnish
kosher salt
Freshly ground black pepper
1 tbsp. butter
1 (8-oz) tube crescent roll dough
2 c. shredded Cheddar
1/2 lb. deli sliced ham

Steps:

  • Preheat oven to 350°. Grease an 8-x-8" baking pan with cooking spray. In a large bowl, combine eggs with chives and season with salt and pepper. In a medium skillet over medium heat, melt butter. When the butter is foamy, add eggs and let set slightly. Reduce heat to medium-low and drag the eggs with a spatula or wooden spoon to create curds. When the eggs are almost cooked to your liking, season with salt and pepper. Remove from heat. On a lightly floured surface, unroll dough and separate the sheet into rectangles. Pinch the perforations to seal. Add a layer of shredded cheese and egg to each rectangle. Top with ham in an even layer. Starting with one short side, roll up each rectangle. Pinch edges to seal. Cut each roll into 4 slices. Place cut side up in baking pan. Bake for 25 to 30 minutes, until the rolls are golden. Garnish with chives and serve.

1 can crescent roll dough
4 eggs (scrambled)
6 slices bacon (cooked and crumbled)
1 cup Cheddar cheese (shredded)
1/4 cup onions and peppers (diced)

Steps:

  • Preheat oven to 350°. Unroll crescent roll dough and split it up into two rectangles that are each 12? x 4?.
  • Spread your toppings evenly over the dough and roll up each rectangle. Slice each roll of dough into six pinwheels. If the dough is a little too hard to cut at this point put the rolls in your freezer for about 15 minutes and try again.
  • Place the pinwheels on a cookie sheet and cook for 15 minutes or until the crescent roll dough is a golden brown.
