- Marinate or brine the Bone-in, Skin-on Chicken Thigh (1 pound) in Salt (to taste), Ground Black Pepper (to taste), and Milk (1 cup) for at least 1 hour, but preferably overnight.
- Preheat air fryer to 375 degrees F (190 degrees C).
- Mix the All-Purpose Flour (1/2 cup), Garlic Powder (1 teaspoon), Paprika (1 teaspoon), Chili Powder (1 teaspoon), Dried Thyme (2 teaspoon), and Cayenne Pepper (1/2 teaspoon) in a medium-sized bowl, then dip the chicken in the flour mixture, one piece at a time, making sure it is coated on all sides.
- Place the chicken in the air fryer basket and cook for 25-30 minutes, flipping halfway through. The final cooking time will depend on your individual air fryer, check to ensure it isn't burnt and internal temperature is 165 degrees F (75 degrees C).
- Add All-Purpose Flour (1 1/2 cup), Baking Powder (3 teaspoon), Ground Cinnamon (1 teaspoon), Egg (2), Maple Syrup (2 tablespoon), and Milk (1 cup) to a large bowl and whisk until combined and the batter is smooth.
- Preheat waffle maker and once ready, spray with Nonstick Cooking Spray (as needed). Add about ¼-1/3 cup of waffle mix to the waffle maker and cook until slightly browned on both sides. Continue until all of the batter has been used.
- Add Butter (2 tablespoon), Maple Syrup (1/2 cup), Cayenne Pepper (1/2 teaspoon), and Chili Powder (1/2 teaspoon) to a small saucepan and heat on medium-low until butter is melted, stirring to combine. Turn off heat.
- Serve 1-2 waffles with 1-2 pieces of chicken and pour maple butter sauce on top. Enjoy!

- Whisk together the eggs, cream, cayenne pepper, 1 tablespoon salt, and black pepper in a large bowl. In a paper bag, shake together the flour, cornstarch, and 1 tablespoon salt.
- Dip the chicken into the beaten egg mixture, then place into the flour mixture and shake to coat. Place the breaded chicken onto a wire rack; do not stack. Let the chicken rest for 20 minutes to allow the coating to set.
- Heat about 3 inches of oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C). In small batches, fry chicken 5 to 8 minutes until golden brown. Remove chicken, and drain on paper towels. Set aside or keep warm in a a low oven.
- Combine the mayonnaise, maple syrup, horseradish, and mustard powder in a medium bowl. Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate.
- To assemble the sandwiches: Place 4 waffles on a cookie sheet, top each waffle with 2 chicken tenders, 3 slices of bacon, and 2 slices of Cheddar. Broil the sandwich for a 3 to 5 minutes until the cheese melts. Spread 3 tablespoons of the maple mayonnaise on the remaining 4 waffles and place on top of the sandwich.
