NONI AFGHANI (AFGHAN BREAD) RECIPE - FOOD.COM

Noni Afghani (Afghan Bread) Recipe - Food.com image

Wonderful and easy bread - Afghan style. I fell in love with this at my favorite restaurant, Kabul, in Madison, WI. They have the most amazing bread ever. This is a good close approximation. Posting for my DD who also loves this one!

Total Time 35 minutes

Prep Time 15 minutes

Cook Time 20 minutes

Yield 8 noni

Number Of Ingredients 9

1 1/2 cups water, warm
1/4 ounce dry yeast (7 grams )
1 tablespoon sugar
4 cups flour
1 teaspoon salt
1/4 cup corn oil
1 egg yolk
1 tablespoon water
1 tablespoon black cumin seeds or 1 tablespoon caraway seed

Steps:

  • Mix 1/2 cup of the warm water, yeast and sugar together and let proof for 10 minutes. When froth appears, sprinkle 1/2 tsp of flour on top and let it continue to proof for 5 minutes more. The froth will rise quickly.
  • Put flour in a large mixing bowl and sprinkle salt over it. Make a well in the middle of the flour and add oil and the yeast mixture. Stir to mix and add small amounts of the water until you have produced a soft, moist dough that can be handled.
  • Knead dough well for 5 minutes. Put dough ball back in bowl, cover with a towel, and let it rise for 1 1/2 hours.
  • When risen for 1 1/2 hours, punch down. Divide dough into 8 equal parts and roll each into a ball. Roll each ball into an oval shape 6 to 7 inches long and 1/2 inch thick. Draw tines of a fork along the length of each noni for a decorative design, if desired.
  • Mix egg yolk and 1 T water, paint each noni with this mixture. Sprinkle cumin seeds or caraway seeds on top of each noni (black cumin seeds are traditional but caraway may be substituted). Put on ungreased cookie sheet and bake in a preheated 350 degree oven for 20 to 25 minutes.
  • Prep time does not include rising time.

AFGHAN SWEET BREAD (ROHT) RECIPE | ALLRECIPES

Afghan Sweet Bread (Roht) Recipe | Allrecipes image

Although roht is technically a sweet bread, in my family it is made more like a cookie. This is my aunt's recipe, which is very simple and easy. Enjoy with tea.

Total Time 40 minutes

Prep Time 20 minutes

Cook Time 20 minutes

Yield 1 11x13-inch baking dish

Number Of Ingredients 8

3 cups all-purpose flour, plus more for dusting
1?½ teaspoons baking powder
1?½ teaspoons ground cardamom
1 pinch salt
2 eggs
1 cup unsalted butter, softened
1 cup white sugar
1 teaspoon nigella seeds

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease one 11x13-inch rectangular baking dish.
  • Whisk flour, baking powder, cardamom, and salt together in a bowl.
  • Whisk eggs together in a small bowl. Discard 1/4 of the egg mixture. Combine remaining egg mixture, butter, and sugar in a large bowl; beat with an electric mixer on medium speed until smooth, about 3 minutes. Fold the flour mixture into the egg mixture slowly. Beat briefly on low speed just until dough comes together.
  • Transfer dough to the baking dish. Dust your hands with flour and pat dough into an even layer about 3/4-inch thick. Prick dough in several places with a fork and sprinkle the nigella seeds evenly on top.
  • Bake in the preheated oven until lightly golden, 20 to 25 minutes. Remove from the oven and run a knife around the edges to loosen it from the pan; cut roht into squares while still warm. Let cool.
