These roasted acorn squash fries are amazing! So easy to make, healthy and delicious! Just cut acorn squash into wedges, toss in olive oil and bake in the oven!

1 acorn squash
1 tbsp olive oil
1/2 tsp cinnamon

Steps:

  • Preheat the oven to 425F. Line a baking sheet with parchment paper.
  • Cut acorn squash in half and scoop out the seeds.
  • Cut acorn squash into 1-inch wedges.
  • Toss the acorn squash wedges in olive oil and cinnamon.
  • Put the acorn squash wedges on a baking sheet in a single layer.
  • Bake for 30 minutes, or until the acorn squash fries are tender.

1 tbsp olive oil

Steps:

  • Cut acorn squash in half and scoop out the seeds.
  • Cut the squash into 1-inch wedges. Pour olive oil over squash pieces and toss to coat.
  • Put acorn squash wedges in the air fryer basket. Cook acorn squash fries in the air fryer at 400F for 15 minutes, flipping them halfway through the cooking time.
