What is a tomahawk steak?

A tomahawk steak consists of a cut of marbled beef that has been sliced off the ribeye primal. It is then butterflied into an evenly shaped piece. The tomahawk steak often weighs from 0.45 to 1 kilogram, usually around 20 cm in height. The tomahawk steak is generally long and rectangular, with the bone protruding at one end. The meat is also heavily marbled with fat to give it that distinctive flavor.

How to cook a tomahawk steak

  1. Place it on the cutting board with the cut face down. You should see where the bone is running through the meat and make sure to start carving from that side.
  2. Slice off as much of the fat as you can without cutting into the meat.
  3. Use a sharp knife to carve in between the rib bones and the meat so as to separate the bone from the heart by about 3/4 of an inch.
  4. Continue to slice the meat from between the ribs on one side of the steak and then do it on the other side as well. Cutting straight down with a sharp knife will make this easier.
  5. Pull off all of those individual slices, known as “ribbons,” and continue carving more rib bones out of the meat until you’ve removed all of them.
  6. Once the bones are all carved out, start slicing your tomahawk steak across the grain. This will make it more tender and tasty.

A tomahawk steak is something that requires a lot of patience and dedication to perfect. If you aren’t ready for this much commitment, then we’d recommend starting with an easier steak, such as a Cowboy Steak or some BBQ Ribs. Here are the steps on how to cook a tomahawk steak perfectly:

Step 1: Season Your Tomahawk Steak

First, before you even think about grilling your tomahawk steak, it’s essential to season your meat appropriately. If you don’t strengthen it correctly, then all the time and effort you put into cooking this thing will be wasted as no one would ever want to eat something bland! So, season your tomahawk steak aggressively. For a 1lb tomahawk steak, you’ll want to use two teaspoons of kosher salt and around 3/4 teaspoon of ground black pepper. If you don’t have any Kosher salt handy, sea salt or table salt can do in a pinch – but using Kosher Salt is better.

Step 2: Let it Rest

Next, let your tomahawk steak rest for about 15 minutes before cooking it. This is way more important than most people think. If you don’t give this tomahawk steak enough time to rest, the juices will spill out when you cut into it, and everything will be ruined. If you want all the delicious juices to stay in, give your steak some time to breathe.

Step 3: Preheat the Oven

Now that both sides of your tomahawk steak are seasoned and rested, you can finally start cooking it! Set your oven to around 260 degrees Celsius or 500 degrees Fahrenheit. Once it gets up to temperature, wait for about 10 minutes before putting your tomahawk steak in.

Step 4: Sear the Meat

While waiting for your oven to heat up, you can start preheating your grill. Once it’s heated up, you’ll need to sear both sides of your tomahawk steak over an open flame or with a cast iron hotplate. It would help if you did this quickly, so only cook it on each side for 30 seconds. Once you’ve seared both sides, you are ready to start baking!

Step 5: Bake the Steak

Now that your tomahawk steak is seared place it in a dish and put it in the oven. For a 1lb tomahawk steak, you’ll want to cook it for around 12 minutes. After that time has passed, flip your tomahawk steak over and put it back in the oven for another 10-12 minutes.

Step 6: Let It Rest Once More

After baking your tomahawk steak a second time, take it out of the oven and let it rest for around 5 minutes. After that time has passed, you can cut into your tomahawk steak and enjoy!

Tomahawk ribeye steaks are best prepared by frying, grilling, or boiling over high heat and cooked at a medium-high temperature for a sufficient amount of time (about 4 minutes on each side for 1-inch (2.5 cm) thick tomahawk ribeye steaks). They will produce an exterior seared with caramelized sugars and a smooth interior, rosy (not bluish or grayish) and uniformly pink from the center to the edge. The ribeye may be cooked with dry heat by pan-frying, broiling, grilling, or induction heating in an ordinary kitchen oven.

Tomahawk steak is cut from either side of the spine behind the shoulder blade. The bones are left in when it is cooked, which makes for presentation purposes at an eatery. When found on a menu, the tomahawk ribeye steak is often called “The Tomahawk.”
