Nonstick cooking spray
1?½ pounds bone-in chicken thighs, skin removed
½ cup spicy brown mustard
½ cup water
2 teaspoons fajita seasoning or salt-free Fiesta Lime seasoning blend*
6 7-8 inches flour tortillas, warmed**
1 cup red, green, and/or yellow sweet pepper strips
Sliced green onions (optional)
Snipped fresh cilantro (optional)
Salsa (optional)

Steps:

  • Lightly coat a large skillet with cooking spray; heat skillet over medium-high heat. Add chicken and cook until brown on both sides. Drain off fat. Transfer chicken to a 1 1/2-quart slow cooker.
  • In a small bowl combine mustard, the water, and fajita seasoning. Pour mixture over chicken, stirring to coat.
  • Cover and cook on low-heat setting for 7 to 8 hours or on high-setting for 3 1/2 to 4 hours. Remove chicken from cooker. Discard cooking juices. Using two forks, pull chicken apart into shreds; discard bones.
  • To serve, divide shredded chicken among tortillas. Top with sweet pepper strips and, if desired, onions. Roll up tortillas. Using a serrated knife, cut each roll-up into five slices. If desired, skewer with decorative picks and serve with cilantro and salsa.

Number Of Ingredients 12

1 head of cauliflower, cut into small florets
1 cooked rotisserie chicken, shredded
3 Tablespoons unsalted butter
4 Tablespoons flour
2 cups of milk
3/4 teaspoon salt
1/4 teaspoon pepper
1 cup shredded gruyere cheese
1 cup shredded mild cheddar cheese
3 cups fresh spinach
1 cup chopped mushrooms
1/4 cup panko bread crumbs

Steps:

  • Preheat oven to 375 degrees.
  • Bring a large pot of water to boil and add cauliflower florets. Boil for 5 minutes and then remove from heat to drain.
  • Melt butter in a large saute pan over low heat. Whisk in the flour and milk slowly. Stir for 3-4 minutes and then bring heat to medium. Stir in the salt and pepper. Add cheese and stir until they are melted. Add spinach, mushrooms, cauliflower and chicken to the pot and cook for 5 minutes. Pour into a 9X9 casserole dish and top with panko bread crumbs.
  • Cover with foil and bake for 20 minutes. Remove the foil and cook for an additional 20 minutes.

  • Bake crab cake bites until golden brown and set, about 20 minutes. Cool in pan @ least 5 minutes. Gently lift each crab cake bite out of the pan w/ a fork and onto a serving platter. NOTE: these can be made 2 hours ahead. Arrange on a baking sheet and allow to sit @ room temperature. Re-warm in 350 degree oven for 5 minutes.
