3 tablespoons butter
1 cup sliced celery
1 cup peeled, coarsely shredded carrot
1 cup chopped onions
3 tablespoons Gold Medal™ All-Purpose Flour
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried thyme leaves, if desired
2 1/2 cups Progresso™ Chicken Broth
1 can (15 oz) cooked wild rice
1 cup half-and-half
1/4 cup slivered almonds, toasted
2 tablespoons chopped fresh Italian (flat-leaf) parsley

Steps:

  • In 4-quart saucepan, melt butter over medium-high heat. Add celery, carrot and onions; cook 3 to 5 minutes, stirring occasionally, until tender.
  • Stir in flour, salt, pepper and thyme; cook and stir 1 minute. Stir in broth and wild rice. Heat to boiling, stirring frequently. Reduce heat to low; cover and simmer 5 minutes, stirring occasionally.
  • Stir in half-and-half; heat just to a simmer (do not boil). Top with almonds and parsley.

Number Of Ingredients 10

2 large eggs, beaten
4 cups cooked wild rice
2 cups shredded cheddar cheese
1 cup dry bread crumbs
1 cup finely chopped onion
1/2 cup all-purpose flour
1-1/4 teaspoons salt
1 teaspoon rubbed sage
3/4 teaspoon pepper
1 pound uncooked lean ground beef

Steps:

  • In a large bowl, combine the first nine ingredients. Crumble beef over mixture and mix well. , Firmly press into a greased 9x5-in. loaf pan. Bake, uncovered, at 350° for 70 minutes. Cover with foil during the last 15 minutes if the top is browning too quickly.

Add to dry ingredients; beat on medium speed 2 minutes. Stir in cranberries, rice and enough remaining bread flour to form a stiff dough (dough will be sticky)., Turn dough onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover with plastic wrap and let rest 10 minutes. , Punch down dough. Turn onto a lightly floured surface; divide in half. Shape into loaves. Place in two greased 9x5-in. loaf pans, seam side down. Cover with kitchen towels; let rise in a warm place until almost doubled, about 20 minutes. Preheat oven to 350°. , Bake until golden brown, 40-45 minutes. Cool in pans 10 minutes; remove to wire racks to cool completely.
