1 pound ground beef
½ cup chopped onion
¾ cup chopped green bell pepper
1?½ tablespoons apple cider vinegar
1 tablespoon Dijon mustard
½ teaspoon minced garlic
½ teaspoon dried parsley
½ teaspoon salt
5 dates Medjool dates, pitted
1 (8 ounce) can tomato sauce
1 tablespoon tomato paste
4 medium russet potatoes, scrubbed

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir ground beef and onion in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Reduce the heat to medium and add green pepper, apple cider vinegar, Dijon mustard, garlic, parsley, and salt. Mix well.
  • Meanwhile, bring 2/3 cup of water to a boil in a small pot and add the dates. Boil just long enough to soften the dates, 30 to 60 seconds. Remove the dates from the pot. Reserve 2 tablespoons of the cooking liquid.
  • Place the dates into a food processor or blender with tomato sauce and tomato paste; blend well.
  • Add pureed date mixture plus reserved cooking liquid to the beef.
  • Prick a potato several times with a fork or knife. Microwave on High power until soft, 5 to 7 minutes. Repeat with remaining potatoes.
  • Serve Sloppy Joe mixture on top of potatoes.

Number Of Ingredients 12

1lbs ground chicken (or any meat you prefer)
1 Tbsp olive oil
1 green pepper - diced finely
1 small yellow onion - diced finely
4 medium Japanese sweet potatoes (or regular sweet potatoes)
2 cloves garlic - minced
1 tsp paprika
1 1/2 tsp chili powder
1 Tbsp grainy mustard
1 Tbsp fish sauce
1 cup Cucina Antica Tomato Basil sauce
1 Tbsp hot sauce

Steps:

  • Heat up your olive oil in a pan on medium heat. Add garlic, green peppers, and yellow onion to the pan and sauté until they are tender (about 5 minutes).
  • Once the veggies are tender, add your ground meat to the pan and cook for about 5 minutes, mixing with the veggies.
  • Once the meat and veggies begin to brown, add paprika, chili powder, grainy mustard, fish sauce, Cucina Antica Tomato Basil sauce, and your favorite hot sauce to the mixture. Continue cooking until your meat is cooked through and the sauce thickens (10-15 minutes).
  • While your meat is cooking, wash and score your sweet potato. (For this step you can also cook your sweet potato however you prefer, I do it in the microwave because it is the quickest way.) Microwave for 4 minutes. Check your potato and continue to microwave for two minutes or until it is fork-tender.
  • When your potato is cooked through, cut it in half (be careful it will be hot), add your sloppy joe filling on top and enjoy!
