AHhhhh the Earthy Sweetness of Truffle Honey! Excellent drizzled over blue cheese, such as stilton or gorgonzola, Goat cheeses or any cheese you enjoy. It mellows the strong cheeses and is a total comfort food! A real delicacy with prosciutto, duck, fresh figs, apples & pears. Or jar it up in a sexy jar for a bridal shower gift;).

Ingredients

2 g black truffles
8 ounces honey

Steps:

Place honey in a double boiler with hot water in bottom. Shaved truffles into tiny pieces, then add to honey. Bring water to a boil, and bring honey to 185°F and keep at 185°F for 10 minutes. Remove from heat and let stand for 10 minutes. Place in sterilized jars and cap.
Optional:.
1-Strain while still warm.
2-If you don`t mind the appearance don`t strain.
3-Or strain and add some back.
BUT be sure to use it and don`t discard any for it is very pricey!

Who wouldn't like white chocolate sorbet with truffle and honey? Excessive? Maybe? Delicious? Absolutely! This recipe was for the 5th course out of six of another charity luncheon awarded to the individual who had the highest bid. In return they get to have a multicourse luncheon with John Paul and ask any questions on business or philanthropy they want to. I think this is the third time I have done such a meal and these individuals are paying anywhere from 25k-50k to have such a meal. All the money goes to charity for a great cause!I try and give the best meals I possibly can give for that amount of money (even though the food could never live up to that price point). Regardless I try and go above and beyond for these meals even though the individuals aren’t coming for the food. This was a vegetarian meal with a Dad and his two daughters. The dad won the bid and was originally going to just send the two daughters but Jp told him to come along too. I can tell you they had a wonderful afternoon and I did my best to impress. Here was the pre-dessert, I hope you enjoy it!
