- In a microwave, melt semisweet chocolate and shortening; stir until smooth. Using a narrow pastry brush, evenly coat the inside of six paper or foil muffin cup liners with chocolate. Refrigerate until firm, about 25 minutes. Repeat once to add a second coat., For mousse, in a small saucepan, combine 1/2 cup cream and white baking chocolate; cook and stir over low heat until melted. Cool completely., Carefully remove chocolate cups from liners. In a small bowl, beat remaining cream until it begins to thicken. Add confectioners' sugar and vanilla; beat until stiff peaks form. Fold into cooled chocolate mixture. Spoon into chocolate cups. Refrigerate until cold., If desired, in a microwave, warm raspberry jam; transfer to a resealable plastic bag. Cut a small hole in a corner of bag; pipe designs onto plates. Top with mousse cups. If desired, decorate with raspberries and mint.

- Begin by gathering your ingredients.
- Line a mini muffin tin with mini cupcake wrappers.
- Place the peanut butter in a microwave-safe bowl and microwave for 30 seconds. Stir and continue to heat in 30 second intervals until melted completely.
- Sift the powdered sugar into the bowl of peanut butter. Mix the peanut butter and sifted powdered sugar together until thoroughly combined.
- Using a teaspoon, measure out the peanut butter filling into 20 equal portions and roll into 20 balls. Gently press down on the peanut butter balls to flatten them.
- Microwave the white chocolate chips for 30 seconds. Stir and continue to heat in 15 second intervals until the white chocolate is smooth. (Note: Make sure your bowl and spoon are completely dry. Any wetness will cause the chocolate to seize.) Fill each mini cupcake wrapper with 1 teaspoon of melted white chocolate.
- Place the peanut butter ball on top of the chocolate. Top with 2 additional teaspoons of melted white chocolate.
- Immediately sprinkle red, white and blue candy sprinkles on top. Place in the refrigerator for 30 minutes to set.

Melt 175g (6oz) chopped white chocolate in a heatproof bowl set over a pan of simmering water (alternatively blast on full power for 15sec bursts in the microwave until melted and smooth).
Using a small paint brush, use some of the chocolate to paint a layer of chocolate all over the insides of 12 petit fours cases [see GH Tip]. Transfer to a baking tray and chill for 5min until firm, then paint a second coat and chill again. Put 125g (4oz) chocolate hazelnut spread (we used Nutella) into a piping bag fitted with a 1.5cm (3/4in) plain nozzle and pipe the mixture into the cups to fill 3/4 full, making sure none comes above the top of the case (level surface).
Use a teaspoon to carefully spoon the remaining melted white chocolate over the tops of the cups to cover completely then sprinkle over some chopped hazelnuts. Allow to set at room temperature (about 4hr) or until solid. Alternatively, for a more glamorous finish, allow the cups to set completely then press on a little gold leaf.
