- Combine cream cheese, sugar, and lemon juice.
- Beat until smooth and creamy.
- Fold cheese mixture into whipped cream.
- Pour into pie crust.

- Garnish with fruit-- peaches, strawberries, blueberries, raspberries, would all be good with this; as would some shaved chocolate!

- " Fluffy Cheesecake From Lubys Cafeteria Ingredients 3 packages (8 oz. each) cream cheese, softened 1 1/2 cups sugar 1 cup butter or margarine, room temp. 1/2 Tbsp. fresh lemon juice 1/4 tsp. vanilla extract (I used a little more) 1 pint whipping cream, whipped 2 graham cracker pie crusts graham cracker crumbs for garnish Directions Cream together the first three ingredients until fluffy. Blend in lemon juice, and vanilla extract. Fold in the whipped cream until well blended. Divide between the two crusts and sprinkle top with graham cracker crumbs. Refrigerate at least 3 to 4 hours before serving. Cook time is the chill time. Instead of the 2 crusts, I made my own crust in a 13x9 pan and made one big cheesecake."

- On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 425°. , Line crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edge is golden brown, 20-25 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool on a wire rack. , In a small bowl, beat cream cheese and confectioners' sugar until smooth. Fold in whipped cream. Spread into pie shell. , In a large saucepan, combine sugar, cornstarch, water and lemon juice until smooth; stir in blueberries. Bring to a boil over medium heat; cook and stir 2 minutes or until thickened. Cool. Spread over cream cheese layer. Refrigerate until serving.

I've not done this yet, but I'm thinking it could easily be made in mini graham cracker tart shells for an easy finger food dessert.
