I first posted this French Silk Pie recipe back in the dark ages of 2008, and it remains one of my all-time favorite desserts of all time.

4 oz. weight Unsweetened Baking Chocolate
1 c. Salted Butter, Softened
1 1/2 c. Sugar
1 tsp. Vanilla Extract
4 whole Eggs
1 package Baked Pie Shell

Steps:

  • In small microwave safe bowl melt 4 ounces of unsweetened baking chocolate until stirrable (about 45 seconds on high). Set aside to cool.In a large bowl with an electric mixer beat 1 cup (2 sticks) of regular (salted) butter and 1 ½ cups of white sugar until fluffy (about 1 to 2 minutes). When melted chocolate is cooled, drizzle it over the butter/sugar mixture. Add 1 teaspoon of vanilla extract. Beat the mixture thoroughly until combined (on a Kitchen Aid mixer, you will be using the whisk attachment).Turn your mixer to a medium speed and over a period of 15 to 20 minutes add in the four eggs, one at a time, leaving about 5 minutes between each egg addition. Once the pie filling is well mixed, pour it into the baked pie shell, scraping every last speck of it out of the bowl. Smooth out the pie filling and place pie in the refrigerator to chill for at least two hours (preferably longer).Plop a heap of whipped cream and garnish with a few chocolate curls if you’re feeling sassy.

French Silk Pie is the most decadent and delicious chocolate pie recipe I know. It's a no-bake pie traditionally made with raw eggs, but the danger from using raw eggs is removed in this recipe by heating the eggs and sugar together to 145°F before adding to the pie! ENJOY!

1 9" fully baked pie crust
4 large eggs
1 1/4 cup sugar (281.25 grams)
4 oz unsweetened baking chocolate (113.4 grams)
1 teaspoon vanilla extract (5 mL)
1 cup salted butter (225 grams)

Steps:

  • Crack the 4 eggs into a small pan, add sugar, whisk until well mixed.
  • Clip the candy thermometer to the side of the pan, place egg mixture over low heat, stirring constantly until the temperature reaches 145°F. 
  • Remove pan from heat,  but make sure the mixture stays at 145°F or higher for 15 seconds. 
  • Add the unsweetened chocolate to the egg mixture and stir gently until all of the chocolate is melted and smooth. Add the vanilla extract and stir to incorporate. 
  • Allow the chocolate mixture to sit at room temperature for 10 minutes or until it reaches 95°F. 
  • In a large mixing bowl or the bowl of a stand mixer, whip butter on high for 5 minutes until it is light and fluffy. 
  • When the chocolate is cooled, pour into whipped butter. Mix on high for 10 minutes. Scraping the bowl as needed to blend in chocolate and butter. 
  • Pour the chocolate pie filling into the baked pie crust, cover and refrigerate at least 4 hours.  Garnish with whipped cream and chocolate curls before serving.
