  • In a large bowl using a hand mixer, beat butter, brown sugar, and molasses until fluffy, about 2 minutes. Add egg and vanilla and beat until combined. In a medium bowl, whisk flour, spices, baking soda, and salt until combined. With the mixer on low, gradually add dry ingredients to wet ingredients, as well as  fresh ginger, orange zest, and black pepper (if using), until dough just comes together. (Do not overmix!) Divide dough in half and create two discs. Wrap each in plastic wrap and chill until firm, about 2 to 3 hours. (Alternatively, divide dough in half and roll each piece of dough between two pieces of parchment to 1/4" thick. Chill until firm.) Preheat oven to 350° and line two large baking sheets with parchment paper. Place one disc of dough on a lightly floured surface and roll until 1/4" thick. (Alternatively, peel off both sheets of parchment from dough, then replace one sheet of parchment back underneath dough.) Cut out gingerbread men with a 3" wide cutter and transfer to baking sheets. Bake until slightly puffed and set, 9 to 10 minutes, depending on the size of your cookie cutters. Let cool on baking sheets for 5 minutes before transferring to a cooling rack to cool completely.   Repeat with remaining disc of dough. Decorate with icing and sprinkles as desired.

  • Combine the flour, baking powder, salt, allspice, cinnamon, cloves, ginger, nutmeg and orange zest in a large bowl. Whisk to combine. Beat the butter and brown sugar in a separate large bowl with a mixer on medium speed until light and fluffy, 2 to 3 minutes. With the mixer running, drizzle in the molasses, mixing well and scraping the bowl halfway through if necessary. Add the egg and beat well. Reduce the mixer speed to low and add the flour mixture to the butter mixture in three batches, mixing until just combined after each addition (the dough will be dense and dry). Divide the dough in half; place each half between 2 large pieces of plastic wrap. Roll out each piece of dough into a 1/4-inch-thick rectangle. Transfer the dough rectangles to a baking sheet and refrigerate for at least 2 hours and up to 8 hours. Preheat the oven to 350 °. Line 2 baking sheets with parchment paper. Cut the dough into cowboy boots or other shapes with 2- to 3-inch cookie cutters and place about 2 inches apart on the prepared pans. Bake the cookies until set but still soft, 10 to 12 minutes. Let cool 5 minutes on the pans, then remove the cookies to racks to cool completely. Decorate with royal icing and sanding sugar. Let set about 1 hour.

WHY DID MY GINGERBREAD COOKIES DEVELOP A STRONGER FLAVOR ...

Oh well, I just put it down to a bad recipe. Today, however, we each had another and agreed the flavor was much stronger, and now I'm really happy with how they turned out.
