Number Of Ingredients 3

150g self-raising flour, plus a little extra
70g suet
small handful of parsley, chopped (optional)

Steps:

  • Whilst your stew is bubbling, make the dumplings. Weigh the flour into a bowl and add ½ tsp salt. Stir through the suet and parsley, if using. Make a well in the centre and add 3 tbsp cold water, mix to a dough, adding more water until the dough is firm but pliable. Divide into eight equal pieces and roll in a little more flour into balls. Chill until needed.
  • When the stew has about 30 mins to go, arrange the dumplings on top and cover with a lid. With the oven at 160C/140C fan/gas 3, cook the stew and dumplings for 20 mins, then remove the lid and cook for another 10 mins until they’re brown and puffed up.

These dumplings were a staple in Grandma's recipe file. She made them for chicken, turkey, and beef stews and soups. These dumplings are basically fluffy biscuits without a crust. They are moist when done and they actually melt in your mouth. I'm also posting her dessert dumplings recipe using stewed fruit. Yummm.....

1 cup(s) all purpose flour
2 teaspoon(s) baking powder
1/2 teaspoon(s) salt
1 tablespoon(s) butter
1/2 cup(s) milk

Steps:

  • Stir together flour, baking powder, and salt in medium size bowl. Cut in butter until crumbly. Stir in milk to make a soft dough. Drop by spoonfuls into boiling soup or stew. Cover and simmer 15 minutes without lifting lid. Serve.
  • VARIATION: To make parsley dumplings, add 1 tablespoon parsley flakes to the dry ingredients.

  • Combine flour, baking powder and 1/8 t. salt in a bowl. Cut butter into the dry ingredients with a fork or pastry blender. Stir in milk, mixing with a fork until the dough forms a ball. Heavily flour a work surface.Use rolling pin or a pizza cutter to cut the dumplings. Use a small spatula to lift the dumplings off the cutting surface. Roll dough out thin with a heavily floured rolling pin. Dip cutter in flour and cut the dumplings in squares about 2 inches x 2 inches. Use a floured spatula to put dumplings on a heavily floured plate. Just keep flouring between the layers of dumplings. To cook, bring stock to a boil. Add in seasonings plus the remaining salt. Drop dumplings in one at a time, stirring as you add them. The extra flour on them will help thicken the stock. Cook for about 15-20 minutes or until they not doughy tasting. Add the cooked chicken to the pot. Serve 8.
