Healthy Real Food Rice Cake Topping Ideas | Recipes to Nourish image

Crispy puffed organic brown rice cakes are the perfect portable gluten free snack. Transform these delicious and healthy rice cakes with beautiful layers of flavor and different textures for a heavenly meal.

Number Of Ingredients 17

15 pitted Medjool dates
Filtered water
2 tbsp butter
3 tbsp cocoa powder (<-- this is the fair-trade cocoa I use)
½ teaspoon vanilla extract
2 tbsp honey
1 cup fresh berries – raspberries, strawberries, blueberries, blackberries, etc.
Pinch sea salt or sea salt flakes (<-- this is my favorite sea salt)
4 oz cream cheese
½ medium-size cucumber, thinly sliced
2 oz Sprouts Brand medium ripe black olives
1 tbsp extra virgin olive oil, drizzled
Pinch sea salt (<-- this is my favorite sea salt)
1 cup Greek yogurt
¼ cup pistachios, shelled
¼ honey, drizzled
1 pack Sprouts Brand Organic Brown Rice Cakes

Steps:

  • For the Greek Yogurt with Pistachios & Honey:Evenly distribute yogurt between 5 rice cakes. Top with pistachios and drizzle with honey.
  • For the Cucumber, Cream Cheese Olives:Evenly distribute cream cheese between 5 rice cakes. Top with very thinly sliced cucumbers and sliced olives. Add a drizzle of olive oil to each rice cake and a pinch of salt.
  • For the Melted Chocolate, Berries & Sea Salted Dates:Add Medjool dates to a small bowl. Barely cover with water and let soak for 15 minutes. After they’ve soaked, add soft Medjool dates to a food processor or blender and pulse until it forms a chunky paste. If needed, add 2-3 tbsp of the date soaking water to help blend.While the dates are soaking, in a small saucepan over medium heat, add butter, cocoa powder, vanilla extract and honey. Heat until melted and fully combined, stirring occasionally. Chocolate is done when mixture is smooth and shiny. Remove from heat and set aside.Evenly distribute the date paste over 5 rice cakes. Top with drizzled melted chocolate, fresh berries and a pinch of sea salt.

I generally make these for breakfast but occasionally enjoy them for dinner when my husband is out of town and I want to make something quick and easy. This recipe is a great base. Have fun changing it up and making it your own! Great topped with salsa!

Number Of Ingredients 6

½ cup cooked white rice
1 egg
1 tablespoon chopped fresh basil
1 teaspoon milk
salt and ground black pepper to taste
1?½ teaspoons butter

Steps:

  • Mix rice, egg, basil, milk, salt, and pepper together in a bowl.
  • Melt butter in a skillet over medium heat. Pour rice mixture into the skillet in 2 equal portions. Cook until browned on the bottom, about 3 minutes. Flip and continue cooking until second side is browned, about 2 minutes more.
