Watermelon Bread Recipe With Fresh Watermelon – Melanie Cooks image

This sweet watermelon bread is amazing! It's made with real fresh watermelon! This is a perfect way to use up leftover watermelon - just turn it into delicious freshly baked watermelon bread!

1 1/2 cup watermelon chunks
1 stick (1/2 cup butter, softened)
2 eggs
3/4 cup sugar
2 cups flour
2 tsp baking powder
1/4 tsp salt
1/2 cup raisins (optional)
1 tsp red food coloring (optional)

Steps:

  • Preheat the oven to 350F. Spray a non-stick 9x5 inch loaf pan with a non-stick cooking spray.
  • Put the watermelon chunks into a food processor or blender and process until smooth. It should yield about 1 cup of pureed watermelon. If you have more, only use 1 cup, if you have less, add enough water to equal 1 cup.
  • Put butter and sugar into a large bowl and mix until combined. Add the eggs and mix until combined. Add the watermelon puree and mix until combined. If using the food coloring, add it and mix until combined.
  • Add the flour, salt and baking powder and mix until combined.
  • Add the raisins (if using) and mix until combined.
  • Pour the batter into a loaf pan. Put in the oven and bake the watermelon bread for 1 hour.

this is my new try of bread which is look like watermelon but taste as sweet bread. this bread is very tasty and this we added some color but for seed we used raisins . this tasty like milk bread with raisin and kids love to eat this type of bread.

Number Of Ingredients 9

3 cup All purpose flour (2 1/2 cup for bread + 1/2 cup for knead)
1 cup Milk
1/4 cup Raisins
2 tsp yeast
1/4 tsp Salt
2 tbsp Sugar
4 tbsp butter/ oil
1 nos Egg
Food color (red and green)

Steps:

  • In bowl mix flour, egg, salt and butter oil mix well and keep aside
  • Now in bowl add warm milk and sugar and yeast and rest 10 mins and when it foam and rise high pour into flour mixture and mix well
  • Knead well and its like sticky and rest for 1 hour
  • When its rise after an hour divide into two and in one half divide into 1/4 refer pic
  • Now in one 1/4 of dough add green and knead well and keep aside
  • In large portion add red color and add raisins and mix well and knead well
  • Now make red dough loaf safe before that knead well and shape it
  • Now in plain color dough roll with pin in large sheet keep red color dough which we already shaped like dough and roll with cover
  • Now again roll green color and keep the plain cover dough. refer pic( if you have doubt before step ref this pic which i tried to say )
  • Now cover with all sides an keep in loaf pan . rest for 2 hours
  • Now preheat oven and apply milk on top of dough and bake for 40 mins
  • Allow to cool and cut bread slices and serve it. Watermelon bread ready
