HOMEMADE DEVILED HAM SPREAD RECIPE | ALLRECIPES

Homemade Deviled Ham Spread Recipe | Allrecipes image

I searched for a recipe for this on this site and couldn't find one, so I winged it and it turned out very nicely. I had to make a second batch to take to the New Year's Eve party because the first batch disappeared. A great way to use leftover ham from holiday dinner to make a great spread for hearty crackers or rye toast points. Also good as a sandwich.

ROBERTA’S PIZZA DOUGH RECIPE - NYT COOKING

Roberta’s Pizza Dough Recipe - NYT Cooking image

This recipe, adapted from Roberta’s, the pizza and hipster haute-cuisine utopia in Bushwick, Brooklyn, provides a delicate, extraordinarily flavorful dough that will last in the refrigerator for up to a week. It rewards close attention to weight rather than volume in the matter of the ingredients, and asks for a mixture of finely ground Italian pizza flour (designated “00” on the bags and available in some supermarkets, many specialty groceries and always online) and regular all-purpose flour. As ever with breads, rise time will depend on the temperature and humidity of your kitchen and refrigerator. Our Greatest Pizza Recipes

Provided by Sam Sifton

Total Time 20 minutes

Yield Two 12-inch pizzas

Number Of Ingredients 5

153 grams 00 flour (1 cup plus 1 tablespoon)
153 grams all-purpose flour (1 cup plus 1 tablespoon and 2 teaspoons)
8 grams fine sea salt (1 teaspoon)
2 grams active dry yeast (3/4 teaspoon)
4 grams extra-virgin olive oil (1 teaspoon)

Steps:

  • In a large mixing bowl, combine flours and salt.
  • In a small mixing bowl, stir together 200 grams (a little less than 1 cup) lukewarm tap water, the yeast and the olive oil, then pour it into flour mixture. Knead with your hands until well combined, approximately 3 minutes, then let the mixture rest for 15 minutes.
  • Knead rested dough for 3 minutes. Cut into 2 equal pieces and shape each into a ball. Place on a heavily floured surface, cover with dampened cloth, and let rest and rise for 3 to 4 hours at room temperature or for 8 to 24 hours in the refrigerator. (If you refrigerate the dough, remove it 30 to 45 minutes before you begin to shape it for pizza.)
  • To make pizza, place each dough ball on a heavily floured surface and use your fingers to stretch it, then your hands to shape it into rounds or squares. Top and bake.

HOW TO MAKE SOURDOUGH BREAD - NYT COOKING
Perhaps you’ve seen impressively holey sourdough loaves on social media, and wondered if you too could make them. You can! Claire Saffitz can show you how.
From cooking.nytimes.com
  • Keep your starter in a container with the lid on, labeled clearly. Once a week, discard all but 25 grams of starter (discarding most of the starter helps avoid building up a massive amount with each successive feeding). Using a digital scale for accuracy, stir 100 grams of room temperature tap water into the starter until the starter is evenly dispersed. Then stir in 100 grams of high-quality white bread flour until you have a smooth paste. Cover and place in the back of the refrigerator. Set a calendar reminder to feed your starter at the same time every week. Why? The yeast and bacteria in starter feed on sugars in the flour, and you’ll need to replenish this food source on a regular basis. Cooling it down will significantly slow the level of activity, or how quickly the micro-organism consume its food source. Bakeries generally keep their starter at room temperature and feed it at least once a day because they are mixing and baking dough constantly, but for most home bakers, refrigerating your starter and feeding it once a week is sufficient. Think of it as a low-maintenance pet!

CROISSANTS RECIPE - NYT COOKING
This recipe is a detailed roadmap to making bakery-quality light, flaky croissants in your own kitchen. With a pastry as technical as croissants, some aspects of the process — gauging the butter temperature, learning how much pressure to apply to the dough while rolling — become easier with experience. If you stick to this script, buttery homemade croissants are squarely within your reach. (Make sure your first attempt at croissants is a successful one, with these tips, and Claire Saffitz’s step-by-step video on YouTube.)

  • Preheat the oven to 200°C (180°C fan) mark 6. Combine the garlic and butter. Season, then rub over the turkey breasts. Lay one breast on a board and place the other on top so the thickness of the turkey roll will be roughly even. Stretch the bacon slices over the turkey, overlapping them a little. Tie the roll together with string, spacing knots 5cm (2in) apart. Put on a large wire rack over a large roasting tin.

Roast for 11/2 hr or until the juices run clear when a skewer is inserted into the thickest part of the turkey.

Transfer the turkey to a board, cover loosely with foil and rest for about 20min before carving. Serve with vegetables, sauces and stuffing of your choice.

    Day-After Pie:

Heat 1tbsp oil in a large pan and cook 1 finely chopped onion for 10min until softened. Add 150g sliced mushrooms and fry for 5min. Stir in 21/2tbsp flour and cook for 1min. Gradually stir in 300ml each chicken stock and double cream. Bring to the boil, stirring, then simmer for 5min to thicken. Stir in 200g chopped cooked turkey, 150g chopped ham and 1tbsp wholegrain mustard. Season. Tip into an ovenproof serving dish, cover with mashed potato and cook in a preheated 200°C (180°C fan) mark 6 oven for about 30min until golden. Serves 6
