3 cups steamed white rice
1 cup diced carrot
1 cup diced broccoli
1 cup diced vietnamese sausage
1 cup diced vietnamese dried pork roll
1 teaspoon vegetable oil
1 tablespoon diced onion
2 teaspoons fish sauce
2 eggs
1 tablespoon of chopped cilantro

Steps:

  • Cook onion in the vegetable for one minute on medium heat.
  • Add carrot and cook for about 7 minutes.
  • Add broccoli and cook for 2 minutes.
  • Add sausauge and dried pork roll.
  • Add two eggs and stir.
  • Turn heat to low.
  • Add a pinch of salt and pepper, add fish sauce, add steamed rice.
  • Stir well.
  • Add Cilantro.
  • Stir well again and turn off heat in five minutes.
  • Enjoy.

Steps:

  • In a medium mixing bowl, combine cooked white rice, beaten egg, egg yolk, soy sauce, and oyster sauce. Mix well and set aside.
  • In a large nonstick skillet, heat olive oil over high heat. Add shallots and stir-fry for about 1 minute.
  • Stir in cooked rice and continue frying until the rice is dry and tender. Add sliced sausages and cook, stirring occasionally, for further 3-4 minutes or until sausages are cooked through.
  • Stir in drained mixed vegetables and cook, stirring, for 1 minute. Add more soy and oyster sausaces to taste if desired.

  • To Cook Heat up a large wok on medium-high heat and add vegetable oil. Add garlic and stir-fry until it is aromatic. Add the Chinese sausage slices and cook for a few mins. Add the frozen vegetables and cook for a few mins. Push the mixture to one side of the wok and add the eggs to the other side of the wok. Stir often so that the egg cooks in small pieces. Mix all the ingredients in the wok. Add the rice and mix properly to ensure that there are no lumps of plain rice. Add the chicken seasoning, garlic powder, salt, sugar and pepper. Mix everything together well. Remove from heat. Plate the servings and serve while hot.

  • To Prep Combine all of the main ingredients together and mix until well combined. Dip the rice paper into warm water and let absorb slightly before placing on to a work surface. Add a portion of the mixture onto the bottom side of the rice paper and tuck the edge over the mixture. Roll the sides of the rice paper onto the covered mixture and continue to wrap the paper, rolling until the rice paper completely covers the mixture. Repeat this process until all of the mixture has been used up. Place in the fridge for 10-20 mins to dry the skin. To Cook In a large pot with enough oil to deep fry the rice paper rolls, heat over a medium to high heat. Fry the rice paper rolls in batches or one at a time for approx. 5 mins to allow the fillings to cook. Ensure that the heat isn't too high to prevent the rolls from burning. Take further care when frying the rolls too as they will stick together at the start of frying. When the rolls have cooked, remove them from the oil and let them drain on a paper towel or over a rack. To Serve Garnish and serve immediately with our nuoc cham dipping sauce or a dipping sauce of your choosing!
