4 boneless pork chops
2 tbsp oil
2-3 cloves garlic (minced)
2 tbsp soy sauce
2 tbsp honey
2 tbsp fish sauce
2 tbsp vinegar
2 lemons (juiced)
6 tbsp fish sauce
3 tbsp sugar
3 cloves garlic (minced)
3 cups warm water
40g bean threads (soaked and chopped)
½ cup dried wood ear mushrooms (soaked and chopped finely)
3 tbsp shallot (minced)
4 eggs
200g minced pork
1 tbsp oil
1 tbsp fish sauce
½ tsp salt
½ tsp pepper
4 cups of broken rice (cooked)
4 fried eggs
Pickled carrots and radishes
Cucumber (de-seeded and sliced)
Soy sauce (to garnish)
Shredded pork skin (bi)
Spring onion (chopped and sautéed slightly)

Steps:

  • To Make Dipping Sauce Place all dipping sauce ingredients in a bowl and mix well until sugar is dissolved. To Cook the Pork Chops Tenderize the pork chops until even thickness. Mix the remaining ingredients until well-combined. Coat the pork chops with the sauce and marinade for at least 1 hr or overnight. Heat a grill or frying pan with oil. Grill the meat until done, about 1-2 mins on each side. Remove and set aside. To Make the Meatloaf Set 2 egg yolks aside, add the remaining eggs into a bowl and beat well. Add the rest of the meatloaf ingredients and mix well. Grease a square or loaf tin and place the mixture into the tin. Spread evenly and steam covered for 30 mins. Spread reserved egg yolks on the top of the meatloaf and steam uncovered for 5 min. Remove and let cool before slicing. To Serve In a serving plate, place the broken rice, grilled pork chop, meatloaf slice, fried egg, shredded pork skin, cucumber slices and pickled carrot and radish slices. Garnish with sautéed spring onion and serve with dipping sauce.

4 8oz pork chops (boneless or bone-in both work)
4 garlic cloves, minced
1 shallot, minced
2 tbsp brown sugar
2 tbsp fish sauce
1/4 tsp pepper
3 tbsp oil
½lb ground pork
2 eggs, 3 egg yolks
1 shallot, minced
1 tbsp fish sauce
1/4 tsp pepper
2 oz vermicelli
4 oz woodear mushroom, chopped
2 green onion, chopped
MSG (optional)
3 tbsp fish sauce
3 tbsp sugar
1.5 tbsp lime juice
3 garlic cloves, minced
1 red chili, minced (adjust based on spice preference)
1 cup water
Steamed rice
Fried eggs (optional)
Cucumber, sliced

Steps:

  • Soak vermicelli in room temp water until softened, about 20 minutes. Drain.
  • In a heat-proof bowl that will fit in your pot, combine ground pork, green onion, remaining shallots, vermicelli, woodear mushroom, 2 whole eggs, remaining fish sauce, pepper and a shake of MSG. Carefully mix to combine, then flatten the top.
  • Bring about an inch of water to a boil in a pot, gently lower the pork bowl into pot. Close lid and let steam for 50 minutes.
  • To check if pork is done, insert a knife in the middle of the bowl and liquid that comes out should be clear.
  • Once cooked, turn off heat, beat the egg yolks, then pour on top of the pork. Close lid, leaving a small crack. This allows egg yolks to cook slowly but retain the beautiful bright yellow color.
  • Combine garlic, 2 tbsp fish sauce, brown sugar, 1 minced shallot, ¼ tsp pepper.
  • Rub seasoning onto pork chops. Set aside and let marinade for at least 30 minutes.
  • Heat oil on medium high heat, then cook pork on a single layer. Flip when there’s a good sear on the bottom, then cook other side. About 10 minutes total, or finish cooking in the oven so that internal temp is 165.
  • Divide steamed pork into equal sections. Serve with rice, pork chop, slices of cucumber, fried egg and nu?c ch?m!
  • Combine all ingredients
  • Serve the dressing along
