4 small onions
250 grams Porcini mushroom
500 grams Pork tenderloin (ready to cook)
4 sprigs rosemary
1 teaspoon peppercorns
1 dried chile pepper
3 Juniper berries
2 tablespoons clarified butter
1 fresh red chile pepper
salt

Steps:

  • Trim root ends of onions, remove outermost layer and cut in half lengthwise. Wipe mushrooms clean with a paper towel and cut in half. Rinse pork tenderloin and pat dry. Cut pork into four equal pieces. Rinse rosemary and tear each sprig into three small pieces. Place bundles of 3 rosemary sprigs on each piece of pork and tie with kitchen twine. In a mortar and pestle, crush peppercorns, dried chile and juniper berries. Season pork pieces with spice mixture.
  • In a large pan, heat clarified butter over high heat. Add pork pieces, mushrooms, onions and chile and sauté until pork is browned on both sides. Reduce heat and cook 5-6 minutes, occasionally turning meat and swirling onions and porcini mushrooms. Season with salt and serve.

This basic roasted pork tenderloin recipe is easy enough for every day and pairs well with your favorite fruit chutney.

2 teaspoons extra-virgin olive oil
1 pound pork tenderloin, trimmed
¼ teaspoon freshly ground pepper
? teaspoon salt

Steps:

  • Preheat oven to 400 degrees F. Heat oil in a large ovenproof skillet over medium-high heat. Sprinkle pork with pepper and salt. Add to the pan and brown on all sides, 5 to 8 minutes.
  • Transfer the pan to the oven; bake until the pork has just a hint of pink in the center and an instant-read thermometer registers 155 degrees F, 10 to 15 minutes. Transfer the pork to a cutting board and let rest for 10 minutes. (The internal temperature will increase to 160 degrees during resting.) To serve, cut the pork into thin slices.
