Number Of Ingredients 4

Vanilla Wafer Crust
50 vanilla wafers finely crushed (2 cups)
1/3 cup butter melted
1/4 cup sugar

Steps:

  • Preheat oven to 325°F. For the Vanilla Wafer Crust, mix vanilla wafer crumbs, butter, sugar and vanilla in medium bowl until well blended. Press evenly into bottom and 2 inches up sides of 9-inch springform pan. Set aside.
  • For the Filling, beat cream cheese and sugar in large bowl with electric mixer on high speed until well blended. Add eggs, 1 at a time, mixing on low speed after each addition just until blended. Add sour cream and vanilla; mix well. Pour into prepared crust.Test Kitchen Tip: For creamier texture if you’re swapping in ricotta cheese in place of the cream cheese, process the ricotta in a blender or food processor until very smooth before combining with remaining filling ingredients.
  • Bake 50 minutes or until center is almost set. Turn off oven. Leave cheesecake in oven 2 hours or until cooled. Remove from oven.
  • Refrigerate 4 hours or overnight. Run small knife around sides of pan to loosen crust; remove sides of pan. Store leftover cheesecake in refrigerator.

My family has been making this dessert for over 80 years. It was first introduced by Nabisco in 1929 as "Chocolate Wafer Icebox Cake". My mom, now almost 90, remembers her mother serving this to her when she was a child. As the wafers sit overnight, they become cake-like and incredibly delicious! Combined with real, hand-whipped whipping cream, it's comfort food at its finest! So creamy, good and satisfying! Perfect with a hot cup of coffee after a great meal... and so easy!

1 - tsp. vanilla
2 - cups chilled whipping cream, unwhipped
1 - 9 oz. package nabisco famous chocolate wafers

Steps:

  • Combine whipped cream and vanilla in a glass bowl. Beat with mixer until stiff peaks form.
  • Spread just a tsp. of whipped cream onto each wafer. Stack wafers together. Then stand on edge on serving platter to make log.
  • Frost with remaining whipped cream. Refrigerate at least 4 hours or overnight.
  • Cut dessert diagonally into 14 slices. Store leftover cake (...if any =) ) in refrigerator.
  • Decorate with mini chocolate chips, chocolate shavings, nuts, toasted coconut or (my favorite) just serve as is!

In a small bowl, dissolve 2 teaspoons coffee granules in 2 tablespoons hot water; brush 1 tablespoon mixture over wafers. Set remaining mixture aside., In a large bowl, beat cream cheese and sugar until smooth. Beat in sour cream. Add eggs; beat on low speed just until blended. Remove half of the filling to another bowl. Dissolve the remaining 3 teaspoons coffee granules in the remaining 1 tablespoon hot water; stir into 1 portion of filling. Spread over wafers., Layer remaining wafers over top; brush with reserved coffee mixture. Spread with remaining filling., Bake 40-45 minutes or until center is almost set. Cool on a wire rack 10 minutes. Loosen sides from dish with a knife. Cool 1 hour longer. Refrigerate overnight, covering when completely cooled., To serve, spread with whipped topping. Dust with cocoa.
