2 pounds onions, cut into 1-inch pieces
2 pounds shallots, halved
12 garlic cloves, peeled
1/4 cup grapeseed oil
1 teaspoon fenugreek seeds
1 tablespoon thinly sliced fresh curry leaves, optional
1 tablespoon ground cumin
1 tablespoon kosher salt
1 teaspoon ground cardamom
1 teaspoon brown mustard seeds
3/4 teaspoon ground turmeric
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon crushed red pepper
1/2 teaspoon freshly ground white pepper
1/4 teaspoon ground cloves

Steps:

  • Preheat the oven to 350°. Line a rimmed baking sheet with parchment paper.
  • In a food processor, working in 3 batches, coarsely chop the onions; transfer to a medium bowl. Repeat with the shallots and garlic, chopping them separately and adding them to the onions.
  • In a large deep nonstick skillet, heat the oil until shimmering. Add the onion mixture and cook over high heat, stirring often, until golden and browned in spots, 25 to 30 minutes.
  • In a spice mill or mortar, grind the fenugreek seeds. Stir into the onion mixture along with the remaining ingredients. Scrape onto the prepared baking sheet and spread in a thin even layer. Bake, stirring occasionally with a skewer to separate the onions, for about 1 hour, until deeply browned and barely moist.

This dip recipe goes beyond vegetables and can also be paired with lamb, chicken, or fish.

Yield Makes about 2 cups

Number Of Ingredients 9

1 tablespoon vadouvan
3 tablespoons olive oil, plus more for drizzling
1½ cups plain whole-milk Greek yogurt
½ cup sour cream
1 tablespoon fresh lemon juice
1 garlic clove, finely grated
3 tablespoons coarsely chopped dill, plus more for serving
Kosher salt, freshly ground pepper
Vadouvan is a French curry-like spice blend. It can be found at specialty foods stores, some supermarkets, and online.

Steps:

  • Heat vadouvan and 3 Tbsp. oil in a small skillet over medium until oil is sizzling around spice and spice is very fragrant, about 2 minutes. Let cool.
  • Mix yogurt, sour cream, lemon juice, garlic, and 3 Tbsp. dill in a medium bowl; season with salt and pepper. Mix in vadouvan oil. Drizzle with more oil and top with more dill.

  • Prepare rice according to package instructions, ideally timing it so that the rice is done about the same time as the curry. Keep covered and let sit for 10 minutes before fluffing with a fork.Heat coconut oil in a large non-stick skillet over medium high heat. Add onion and sautée until softened and just starting to color, about 8 to 10 minutes. Add curry powder and salt and stir until onion is evenly coated and fragrant, about 1 minute.Add tomato and okra and cook for 5 to 7 minutes or until tomatoes begin to break down and okra starts to soften.Add chicken, stirring and flipping until most of the chicken is visibly opaque, about 10 minutes.Add coconut milk and simmer for 10 to 15 minutes or until thick and velvety and chicken is cooked through. Add lime juice, then taste and season with additional salt and/or lime juice as desired.Divide rice among serving bowls and spoon curry over top. Garnish with fresh cilantro and serve.
