or more bunches shredded leafy greens, enough to fill a quart jar
1-3 Tbsp.
sea salt

garlic cloves, peeled and smashed

Steps:

  • In a large bowl combine greens and salt. Massage the leaves with the salt and let rest 10 minutes so that the juices come out of them.
  • Add half of the greens to a quart jar. Throw in the garlic cloves and pack the rest of the greens tightly on top, pushing them down so that the juices cover them.
  • Cover tightly and ferment 3 days or until they are bubbly and tangy to your liking. Transfer to cold storage.

Canning salt
Heavy crock

Steps:

  • Note: Grandpa says the best time to fix kraut is as near to the full moon as you can get. Grind up 1 gallon of turnips per 1 rounded tbsp. of canning salt. Put down in 3 gallon crock. Mix thoroughly. Add in another gallon of grnd turnips and salt and push down till packed tight. Keep adding till jar is 2/3 full. Keep at room temperature; covered. Takes 10 days of sitting. Uncover; then put in freezer bags or possibly butter dishes and put in freezer till ready to use. Cook the same as any frzn vegetable. Can add in wieners or possibly ham to flavor.

Sprinkle with about 1 tablespoon of sugar. With hands, work salt and sugar into turnips, squeezing as your go to make liquid. Repeat until all turnips are used, continuing to add salt and sugar as you go.
