2/3 cup cider vinegar
1/4 cup water
1 teaspoon sugar
2 avocados, sliced
4 sliced whole wheat bread
1/2 teaspoon salt and pepper
4 ounces tuna
1/2 cup parsley
2 tablespoons chopped almonds
2 tablespoons chopped olives

Steps:

  • Bring onion, vinegar, 1/4 cup water, and sugar to a boil in a small saucepan over medium-high. Remove pan from heat; let stand 5 minutes. Drain.
  • Divide the avocado slices evenly among bread slices; mash with a fork. Sprinkle with 1/4 teaspoon salt and 1/4 teaspoon pepper. Top evenly with tuna, onions, parsley, almonds, and olives. Sprinkle with remaining 1/4 teaspoon salt and remaining 1/4 teaspoon pepper.

ground cumin

1/4 tsp.

garlic powder

1/4 tsp.

red pepper flakes

1/4 c.

extra-virgin olive oil

Kosher salt

Freshly ground black pepper

3/4 c.

english cucumber, finely chopped 

1/4 c.

red onion, finely diced 

1/4 c.

yellow, orange, or red bell pepper, diced

1/4 c.

celery, diced

1/4 c.

fresh cilantro leaves, chopped

large avocados, peeled, seeded, and diced

(5-oz.) cans yellowfin tuna, drained, preferably oil-packed

slices whole wheat or other preferred bread

Steps:

  • Make the dressing: In a medium bowl, whisk the lemon juice, mustard, cumin, garlic powder, and pepper flakes, until combined. While whisking, slowly drizzle the olive oil into the lemon juice mixture until fully combined. Season with salt and pepper. Make the salad: Add the cucumber, onion, bell pepper, celery, and cilantro to the dressing. Toss to coat. Add the avocado and toss, mashing slightly with a fork until a very chunky mash forms. Gently fold the tuna into the avocado mixture, letting it break up into bite size pieces or smaller.  Mound the salad on top of 4 pieces of bread and sandwich with remaining bread.
