COPYCAT FRIED CHICKEN SANDWICH RECIPE: HOW TO MAKE IT

- Cut each chicken breast horizontally in half; place in a large bowl. Add buttermilk and hot sauce; toss to coat. Refrigerate, covered, 8 hours or overnight. , Preheat air fryer to 400°. Stir eggs into chicken mixture. In a shallow dish, whisk flour, garlic powder, onion powder, paprika, pepper and salt. Remove chicken from buttermilk mixture. Dredge chicken in flour mixture, firmly patting to help coating adhere. Repeat, dipping chicken again in buttermilk mixture and then dredging in flour mixture., Place chicken on a wire rack over a baking sheet. Refrigerate, uncovered, for 30 minutes. Using a pastry brush, lightly dab both sides of chicken with oil until no dry breading remains. , In batches, arrange chicken in a single layer in greased air fryer. Cook until a thermometer reads 165° and coating is golden brown and crispy, 7-8 minutes on each side. Remove chicken; keep warm. Toast buns in air fryer until golden brown, 2-3 minutes. Top bun bottoms with chicken. If desired, serve with optional toppings.

- Thoroughly rinse the chicken pieces, then place them in a bowl and cover with 4 cups of the buttermilk. Soak in the fridge overnight or up to 24 hours. When you're ready to fry the chicken, remove the bowl from the fridge and let it sit on the counter for 30 minutes, just to take the chill off. In the meantime, preheat the oven to 360° and mix up the breading. Place the flour, seasoned salt, paprika, black pepper, thyme and cayenne (plus extra cayenne if you like heat) in a very large bowl. Stir together well. In a small bowl, combine the remaining 1/4 cup buttermilk and the milk. Pour the milk mixture into the flour mixture and gradually mix with a fork until there are little lumps throughout; these will adhere to the chicken and make for a crispier breading. If necessary, add a little more flour or milk to make the breading slightly lumpy. Heat 1 1/2 to 2 inches of oil in a deep skillet or Dutch oven over medium-high heat until a deep-fry thermometer reaches 365°. Lower the heat slightly, if necessary, to keep the oil from getting hotter. Working in batches, thoroughly coat each chicken piece with breading, pressing extra breading onto the chicken if necessary. Place the breaded pieces on a plate. Add the breaded chicken to the oil, 3 or 4 pieces at a time; make sure they don't stick together. Cover the pan and fry for 5 to 7 minutes, checking occasionally to make sure the chicken isn't getting too brown. Turn the pieces over, cover again, and cook for 3 to 5 minutes more. All the while, monitor the temperature of the oil to make sure the chicken doesn't burn. Transfer the fried chicken to a baking sheet and continue frying the rest of the chicken. When all the chicken has been fried, remove the wings and legs to a rack set over a paper towel-lined baking sheet and keep covered. (These should be cooked all the way through by now, but always check if any pink juice or meat is visible. If so, return to the hot oil for another minute or so, until fully cooked.) Leave the thighs and breasts on the baking sheet. Bake the thighs and breasts for 15 minutes to finish cooking. (You can cut into the thicker part of one of the larger pieces just to make sure the chicken is cooked through. If any pink juice or meat is visible, the chicken needs to continue cooking in the oven.) Drain on the rack set over the baking sheet.

Air Fryer Chicken Breast
Cooking moist and juicy chicken breast in air fryer, in matter of minutes, is one of the Top reason why I use my air fryer every day. For this recipe, I marinate chicken breast (boneless and skinless) in Greek style marinate of lemon, herbs and garlic. That's it. Once marinated, cook chicken in air fryer. Read on to know more tips and details.
What Do You Need to Make Moist Chicken Breast in Air Fryer?
Ingredients to make moist chicken breast in air fryer are easy to find pantry staples. Here is what you need to make marinate for chicken:
- Olive oil
- Lemon Juice
- Garlic
- Herbs - Oregano & Cumin
- Paprika
- Salt and Pepper
Marinade helps to tenderize chicken and infuse with delicious herb, garlic and lemon flavor.
To make chicken in air fryer, I start with marinating the chicken. Either leave chicken in marinade to marinate for at-least 20-30 minutes or refrigerate until ready to use (up-to overnight)
Cooking Moist Chicken Breast in Air Fryer
My experience with air fryer has taught me three important things to note while cooking perfectly moist chicken breast in air fryer. i.e.
- Preheat Air Fryer - This ensures even cooking from the start. Chicken cook golden browns from outside and juicy inside.
- Adjust the timings as per the side/make and model of air fryer. (more on this ahead)
- Flip Chicken Breast half way through cooking. This ensure that chicken cooks evenly. Also gives good idea of how long it will take to chicken to be fully done. (very important to avoid dry chicken breast)
I used Ninja Foodi Max XL Air Fryer (5.5 quart) and cooked boneless skinless chicken breast for this recipe. As shown in pictures above, process of cooking is very simple:
- Marinate Chicken Breast for at-least 30 minutes.
- Preheat air fryer and place marinated breast on air fryer rack. Cook 5 minutes.
- Flip after 5 minutes and add seasoned beans.
- Cook additional five minutes or until chicken is cooked through. If cooking beans, make sure to stir twice (every 2 mins) for even cooking.
Air Fryer Timings for Cooking Chicken Breast
Time to cook chicken breast in air fryer vary based on two things:
- Size of Chicken Breast. For example, when air fried at 375 degrees Fahrenheit, smaller chicken breasts will be ready in 10 minutes where as large chicken breasts will take 12-14 minutes.
- Size of Air Fryer. For example, if an air fryer is bigger in size (i.e. more space to circulate hot air), it will cook faster than smaller. So to ensure proper cooking, always preheat air fryer for 3 minutes. After first 5 minutes of cooking, flip chicken and then cook 5 minutes, then on keep an eye and check every 2 minutes for doneness.
Air fryer makes cooking fun and fast! I've been using it more than my pressure cooker. (which says a lot) If you are still thinking to buy an air fryer, I can tell you that it's a worth investment. The time I've saved by cooking dinner in air fryer has already paid off my investment (plus few folds).
