Traditional flour tortillas - homemade and much better than store bought. Do not substitute vegetable oil or shortening for the lard.

4 cups all-purpose flour
1 teaspoon salt
2 teaspoons baking powder
2 tablespoons lard
1?½ cups water

Steps:

  • Whisk the flour, salt, and baking powder together in a mixing bowl. Mix in the lard with your fingers until the flour resembles cornmeal. Add the water and mix until the dough comes together; place on a lightly floured surface and knead a few minutes until smooth and elastic. Divide the dough into 24 equal pieces and roll each piece into a ball.
  • Preheat a large skillet over medium-high heat. Use a well-floured rolling pin to roll a dough ball into a thin, round tortilla. Place into the hot skillet, and cook until bubbly and golden; flip and continue cooking until golden on the other side. Place the cooked tortilla in a tortilla warmer; continue rolling and cooking the remaining dough.

4 cups all-purpose flour
?2 teaspoons baking powder
? 2 teaspoon salt
?2 tablespoons lard
?1 1/2 cups milk, room temperature

Steps:

  • Combine flour, salt and baking powder in a large bowl. Add the lard, and using your fingers, cut in the lard until the mixture resembles coarse meal. Stir the milk in with a fork until a sticky dough is formed. Using your hands, knead the dough inside the bowl 10 or 12 times, until it forms a well incorporated ball. Cover with a damp paper towel and let it rest for 15 minutes. Divide the dough into balls. Use walnut sized for snack-sized 4â?³ tortillas, and use twice that to make 6â?³ tortillas for tacos. Allow to sit another 15 minutes. Heat a cast iron skillet over high heat. Place one tortilla round into hot skillet Cook until large bubbles start appearing, about 30 seconds Flip it over to cook the other side. Stack the tortillas on a plate while you finish the batch, but do not place them in an oven.
