Thai Spicy Basil & Pork Belly Stir-fry - Marion's Kitchen image

I’m a big fan of the flavour pork belly brings to a dish, and this spicy Thai stir-fry is no exception. Deep-frying it to begin with gives you a gorgeous crispy texture (make sure you don’t overcrowd the pan), and then the spicy chillies really bring this one home! Do try and look for Thai basil for a more authentic flavour, but if not, Italian basil is a great back-up option.

400g (14 oz) pork belly, skin removed, cut into bite-sized pieces
½ tsp ground white pepper
1 cup plain flour
3 birds’ eye chillies
3 large chillies
3 garlic cloves
3 tbsp oyster sauce
1 tbsp fish sauce
1 tsp sugar
2 tbsp vegetable oil
1 heaped cup of holy basil leaves*
vegetable oil for stirf-rying and deep frying
sea salt

Steps:

  • Combine the pork, white pepper and 1 tsp of salt. Coat the pork with flour. Pour the oil for deep frying into a large saucepan or wok over high heat. When the oil is hot, deep fry the pork in batches. Drain on paper towel and set aside. Use a mortar and pestle to pound the chillies, garlic and ½ tsp salt to a rough paste. Mix the oyster sauce, fish sauce and sugar in a small bowl. Heat 2 tablespoons of oil in a wok or frying pan over high heat. Add the chilli paste and cook for 30 seconds. Add the pork and the stir-fry sauce and toss until well combined. Add the holy basil and toss until just wilted. Remove from heat and serve. *NOTE: Holy basil (called ‘bai grapao’ in Thai) is also known as hot or spicy basil. It can be found at Asian or Thai-specialty grocery stores. Substitute Thai basil or regular Italian basil if unavailable.

3 tablespoons vegetable oil
3 cloves garlic, chopped
3 large hot chile peppers, thinly sliced
1?½ cups sliced pork
1 tablespoon dark soy sauce
1 tablespoon sweet soy sauce
4 tablespoons fish sauce
1 tablespoon chile paste in soybean oil
1?½ cups sliced white onion
½ cup sliced green bell pepper
1 cup Thai basil leaves
1 teaspoon ground white pepper

Steps:

  • Heat oil in a wok over high heat. Add garlic and chile peppers and cook until garlic starts to brown, about 30 seconds. Add pork and stir-fry until browned, about 3 minutes. Pour in dark soy sauce, sweet soy sauce, and fish sauce. Cook and stir until liquid has reduced by half, about 3 minutes.
  • Add chile paste, onion, and bell pepper. Stir-fry until pork is cooked through, 5 to 6 minutes. Stir in basil leaves and season with pepper. Stir until well combined.

  • To Prep Place the whole piece of pork belly in boiling water and simmer until tender (around 50 minutes). Pierce the skin with a fork. Rub the skin with baking soda then follow by half of the salt and pour white vinegar all over the skin. Use the remaining salt rub the meat. Allow to cool. In a deep pan or pot, place the pork skin side down in cold oil and turn to high heat. Fry until skin puffs up. Then, place the meat side down and continue frying until golden brown. Allow to cool, then cut into bite-sized pieces. Discard all but 1 tbsp oil. Blanch beans in boiling water until tender, then refresh in ice-cold water. Drain and set aside. To Cook Heat the reserved oil over low heat. Add red curry paste and stir-fry until fragrant. Add water and palm sugar. Stir over low heat until the palm sugar has dissolved. Then, add pork, beans and kaffir lime leaves. Stir through and dish out. Serve. Tips When piercing the pork belly’s skin, the more you pierce, the more the skin will puff up. Once the pork belly has cooled down, place it in an oven at 140°C for 20 mins. Remove and allow to cool again before deep frying. This will help remove moisture from the skin, allowing it to puff up easier.

  • 1. Slice the pork lengthways into 5mm thick strips, then cut each strip into four pieces across.

    2. Toast the rice for 6-8 minutes in a dry pan over a medium heat, tossing constantly until evenly golden. Cool the rice before grinding to a rough powder with a mortar and pestle.

    3. Combine the sauce ingredients in a small bowl.

Add the sugar snaps and sauce mixture. Allow it to bubble along for about 40 seconds, then toss through the Thai basil.

    6. Tip onto a serving plate, squeeze over the lime juice and scatter over the ground rice. Serve with steamed rice.
