This is a traditional Pad Thai recipe used by a friend's mother. You can use chicken, pork, beef, tofu, or a combination. You may want to start with less pepper, and work your way up.

1 (12 ounce) package rice noodles
2 tablespoons butter
1 pound boneless, skinless chicken breast halves, cut into bite-sized pieces
¼ cup vegetable oil
4 eggs
1 tablespoon white wine vinegar
2 tablespoons fish sauce
3 tablespoons white sugar
? tablespoon crushed red pepper
2 cups bean sprouts
¼ cup crushed peanuts
3 green onions, chopped
1 lemon, cut into wedges

Steps:

  • Soak rice noodles in cold water 30 to 50 minutes, or until soft. Drain, and set aside.
  • Heat butter in a wok or large heavy skillet. Saute chicken until browned. Remove, and set aside. Heat oil in wok over medium-high heat. Crack eggs into hot oil, and cook until firm. Stir in chicken, and cook for 5 minutes. Add softened noodles, and vinegar, fish sauce, sugar and red pepper. Adjust seasonings to taste. Mix while cooking, until noodles are tender. Add bean sprouts, and mix for 3 minutes.

wide rice noodles

lime juice

brown sugar

fish sauce

low-sodium soy sauce

cayenne pepper

bell pepper, thinly sliced

cloves garlic, minced

eggs, lightly whisked

shrimp, peeled and deveined

Freshly ground black pepper

green onions, thinly sliced

roasted peanuts, chopped

Steps:

  • In a large pot of salted boiling water, cook noodles until al dente. Drain. In a small bowl, whisk together lime juice, brown sugar, fish sauce, soy sauce, and cayenne pepper. Set aside. In a large nonstick pan over medium-high heat, heat oil. Add bell pepper and cook until tender, about 4 minutes. Stir in garlic and cook until fragrant, about 1 minute more. Add the shrimp and season with salt and pepper. Cook until pink, about 2 minutes per side. Push the shrimp and vegetables to one side of the pan and pour in the egg. Scramble until just set then mix with the shrimp mixture. Add the cooked noodles and toss until combined. Pour in the lime juice mixture and toss until the noodles are coated. Garnish with green onions and roasted peanuts before serving.

  • To Prep In a small pot, mix all ingredients for pad thai sauce and cook over medium heat for 15-20 mins until sauce thickens. Taste test and add more sugar if the tamarind is too sour for your liking. Store sauce in a sealed container and refrigerate for use later. To Cook In a wok or a pan, heat 2 tbsp of oil and fry shallots until fragrant. Add noodles and stir-fry until softened. Using the spatula, push the noodles to one side of the wok. On medium-high heat, add ½ tbsp oil, prawns, fermented radish and bean curd to the now empty side of the wok. Stir-fry fir a minute and fold the noodles onto the ingredients. Add pad thai sauce and continue to stir-fry until sauce evenly coats the noodles. Then turn up the heat and add bean sprouts, chives and peanuts and stir-fry for about a minute. Dish out the noodles and set aside. In a small bowl, beat 1 egg and set aside. Wipe the wok clean and return to medium–high heat. Add 1 tbsp vegetable oil, ensuring it coats the surface of the wok evenly. Take hold of the wok handle with one hand, pour in the beaten egg and quickly swirl the wok in a wide circular motion to coat wok to create a thin crêpe-like layer of egg. Cook for about a minute until the egg crêpe is set. Spoon the noodles into the centre of the wok and scatter over the peanuts. Then fold over the sides of egg crêpe into the centre to cover the noodles and form a parcel. Flip the egg-wrapped pad thai over in the wok to briefly seal the folded ends, then slide it onto a serving plate. Serve the dish with fresh bean sprouts, chives, peanuts, sugar and lime wedges.

  • Heat a wok (see below), and then add in the belly pork and stir-fry till it turns brown, and the fat crispens and reduces. If it becomes too dry add in a very small amount of peanut oil. Add in the curry paste, and stir-fry to combine, then add in the fish sauce, chili oil, garlic, sugar, chilis and pepper, and stir-fry for about two min stirring continuously to combine the flavors and mix well. Add in the bell peppers and stir-fry till they just begin to soften, then add in the long beans and stir-fry till heated through (about 30 seconds). Serve with steamed Thai jasmine rice. Comments: This dish is made with belly pork. There are a number of reasons for this: on the pragmatic level the Thais tend to use all of an animal, and this is a way of using the rather fatty belly pork. Secondly the style of cooking means which the dish is cooked in the pork fat itself, that enhances the flavor. Thirdly, the fatty meat absorbs the additional flavors and so tastes better. We suggest which you use a non-stick stir-fry pan or possibly saute/fry pan for this dish if available (the pork sticks to the pan quite easily). The wok or possibly pan should be quite warm, so as to sear the pork and render the fat quickly. If the pan is too cool it will tend to become leathery and "chewy". Sliced chilis are "optional". You can also reduce the amount of red curry paste used quite substantially without too much adverse affect on the authenticity of the dish.
