1?½ pounds green beans, trimmed
1 cup julienned carrots or packaged fresh julienned carrots
¾ cup chicken broth
¼ cup soy sauce
¼ cup hoisin sauce
1 tablespoon cornstarch
1 tablespoon toasted sesame oil
3 tablespoons canola oil
2 cups sliced stemmed fresh shiitake mushrooms
1 tablespoon grated fresh ginger
4 cloves garlic, minced
2 tablespoons snipped fresh basil
1 tablespoon toasted sesame seeds
Fresh basil leaves

Steps:

  • Bring a large pot of salted water to boiling. Add green beans; return to boiling. Boil 4 minutes. Add carrots; boil 1 minute more. Drain well.
  • In a small bowl stir together next 5 ingredients (through sesame oil); set aside.
  • In a large wok or a 12-inch nonstick skillet heat canola oil over medium-high heat. Add mushrooms, ginger, and garlic; cook and stir about 3 minutes or until mushrooms are tender. Stir broth mixture and add to skillet; cook and stir about 1 minute or until just thickened and bubbly. Stir in green beans and carrots and the 2 Tbsp. basil; heat through.
  • To serve, sprinkle with toasted sesame seeds and garnish with additional fresh basil leaves.

1 lb green beans, cut into 1 inch pieces (4 cups)
2 medium carrots, cut into bite-sized strips (2 cups)
1 tablespoon butter
1 teaspoon cornstarch
3 tablespoons teriyaki sauce
1 tablespoon water
1 teaspoon sesame seeds (can be toasted)

Steps:

  • In a medium saucepan cook beans and carrots in small amount of boiling water for 7-10 minutes (covered with lid).
  • Drain and set veggies aside.
  • Melt butter in pan and stir in cornstarch, adding the teriyaki sauce and water.
  • Return veggies to pan and toss gently.
  • Heat through and sprinkle with sesame seeds.
