CHEVY'S SWEET CORN TAMALITOS RECIPE -

I started seeing this delightful little scoop of heaven on the edge of my plate at a few of the Mexican restaurants around town, so I decided make it at home. This recipe is actually the recipe they use at Chevy's, which I found published in the local paper.

Number Of Ingredients 10

5 tablespoons margarine, softened
1/4 cup masa harina flour
1/3 cup sugar
2 cups corn kernels (fresh or frozen, thawed)
1/2 cup cornmeal
1/2 cup water
1 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons milk
1 teaspoon milk

Steps:

  • In a small bowl, mix the margarine, masa and sugar with mixer until light and fluffy, about 1 minute.
  • Blend 1/2 the corn kernels with the water in a blender until smooth.
  • Combine with margarine mixture, stirring well.
  • Add the remaining corn, cornmeal, baking powder, salt and milk.
  • Bring a medium saucepan of water to a boil.
  • Pour the mixture into an 8-inch baking dish.
  • Tightly cover with plastic wrap and set atop the saucepan of boiling water.
  • Keep pan tightly wrapped and steam for 50 minutes to 1 hour.
  • Check water level often, until a toothpick inserted into the center comes out clean.
  • I have also made this in the oven, setting the pan in a water bath.
  • I do not know the temp I had the oven on, or how long I kept it inches If anyone tries it, please add that info.

TOMALITO RECIPE -

I was cleaning out an old recipe box and found this stained card with faded ink. Not sure where I got it from but do remember it being quite the gem (if the stains are any indication, it's also well used). This is like a steamed corn pudding that is made on the stove top. Many Mexican restaurants serve a small scoop of this on every plate. A little time consuming, but well worth the work and the wait!

5 tablespoons margarine, softened
1/4 cup masa harina
1/3 cup sugar
1/2 cup water
2 cups frozen whole kernel corn, thawed
1/2 cup cornmeal
1 teaspoon baking powder
1/2 teaspoon salt
4 teaspoons milk

Steps:

  • In a medium bowl, mix together the margarine, masa flour, and sugar until light and fluffy.
  • In a food processor or blender, blend one cup of the corn kernels with the water and cornmeal just until smooth. Stir this mixture into the masa mixture. Mix in the remaining corn, baking powder, salt, and milk until the batter is smooth. Pour into an 8x8 inch glass baking dish.
  • Place the baking dish over a large saucepan of simmering water. Cover the baking dish tightly with aluminum foil, and steam for 50 to 60 minutes, or until firm. Check water occasionally, and refill if necessary. Stir pudding before serving to give it a consistent texture. Serve in small scoops.

In a blender container, blend half the corn kernels with the water until smooth. Combine this mixture with the margarine mixture, stirring well. THE Tamalito should have a smooth, moist texture. * Smoked Jalapenos skewer the Jalapenos and put into the smoker for a few hours, they come out quite moist and flavorful. I suppose you could put them in vinegar of freeze them, but I use the smoker often enough I just always throw in a skewer or two of Habs and Jalapenos to add a little smoky kick to any dish! TAMALITO (DUCUNU) - MELINDA'S PEPPER SAUCES
Tamalitos are something my mother taught me how to make 30 years ago. I used to serve them in my BBQ restaurant in place of corn bread. My parents are from Belize and this little sweet and savory pockets of goodness is a staple in their diet. They are also know in Belize as Ducunu, the Garifuna word for "boiled corn." The Garifuna are an Afro-indigenous people originally from the Island of St. Vincent that eventually settled in Belize. Regardless of the name, these little corn tamales are perfect with savory meats like barbecue, carnitas, barbacoa, etc. I have featured them in this photo with my Carne asada (see Carne Asada con Paleo Hacks) and my Avocado Cilantro Lime Crema (see recipe) because, well, because why not! These all go together to form a perfect bite of savory heat and flavor!

The purpose of placing the stems at the bottom is to avoid burning the tamalitos. If you don´t have stems don´t worry, just check regularly that they don´t burn.
