25 corn husks
1 pound prepared masa for tamales
1 small pineapple cut into small cubes
2.5 cups brown sugar
1 stick Cinnamon
1 teaspoon Baking powder
1/2 cup butter room temperature
1/4 cup milk room temperature
1/4 cup Raisins
1/4 cup Coconut shredded

Steps:

  • "For the filling: Chop the pineapple into small cubes. Boil pineapple with 1 cup of water and cinnamon. Reduce to a low-med heat. Cook stirring for 20 minutes. For the masa: In a large mixing bowl combine the masa with the sugar (1 ½ cups approx.), butter, milk, baking powder and some of the pineapple juice from the boiled pineapple. Beat with a hand whisk until mixed well. Adjust sweetness to taste. To make the tamales: Wash the cornhusk with water. Pour 1 tablespoon of the masa onto the husk and spread out until you have an area of @ 3” covered. Place in the middle some of the prepared pineapple, raisins and coconut. These Mexican sweet tamales are so easy to make! They're vegan tamales and I was inspired to create these by the traditional pineapple tamales and the popular piña colada cocktail. This recipe uses coconut oil for a delicious touch.

½ cup shredded coconut (dry coconut)
25 maraschino cherries (vegan brand and optional)
