2 bacon strips, chopped
1 medium onion, chopped
4 boneless pork loin chops (4 ounces each)
1/2 teaspoon garlic powder
1/4 teaspoon salt
2 slices reduced-fat Swiss cheese, halved

Steps:

  • In a nonstick skillet coated with cooking spray, cook bacon and onion over medium heat until bacon is crisp, stirring occasionally. Drain on paper towels; discard drippings., Sprinkle pork chops with garlic powder and salt. Add pork chops to same pan; cook over medium heat 3-4 minutes on each side or until a thermometer reads 145°. Top pork with bacon mixture and cheese. Cook, covered, on low heat for 1-2 minutes or until cheese is melted. Let stand 5 minutes before serving.

A tender chopped steak smothered in swiss cheese, sauteed mushrooms and onions and covered in a rich brown gravy. I had this the other night at Denny's and fell in love with it. I just had to re-create it at home.

Number Of Ingredients 8

1 lb ground sirloin
1 tablespoon butter
salt, to taste
pepper, to taste
4 slices swiss cheese
1/4 small onion, sliced
1 (4 1/2 ounce) jar sliced mushrooms
1 (14 1/2 ounce) can beef gravy

Steps:

  • Shape ground sirloin into patties. Season with salt and pepper to taste. Grill, broil or fry to desired doneness.
  • Remove patties to a plate and keep warm. Top with a slice of swiss cheese. In same pan, saute mushrooms and sliced onion in butter until tender. Add the beef gravy and warm through.
  • Top cheese covered patties with the sauteed onions,mushrooms and beef gravy.

  • Rub the pork chops with 1 tablespoon of the oil, the remaining 1/4 teaspoon salt, and 1/8 teaspoon pepper. Put the pork chops on top of the Swiss chard. Drizzle the remaining tablespoon oil over the chard, around the pork chops. Sprinkle the Parmesan and fontina over the chard, around the chops. Bake until the chops are just done, about 18 minutes.     1. Preheat oven to 375F. 
    2. In a small bowl, whisk pesto with 1 tbsp of olive oil, lemon zest and chili flakes. Set aside. 
    3. On the long side of the pork chop (opposite of the fat cap) use a sharp knife to very carefully slice 3/4 of the way through the pork chop, so that it opens like a book. Repeat with remaining pork chops. Season with 1/2 tsp salt and freshly cracked pepper. 
    4. Spread pesto evenly on the inside of the pork chops that you have just cut open. On the bottom half of each pork chop, arrange 4 pieces of asparagus and fold the top over.  
    5. Fold the top of pork over and secure with a toothpick; I find threading it like a needle through both sides of the pork helps and allows the pork to stay closed and sear properly. 
    6. Heat a large oven-proof braiser or saute dish over medium heat. Add 2 tbsp olive oil, followed by pork. Sear pork for 2-3 minutes per side until a golden crust forms; you may need to do this in two batches. Set seared pork aside. 
    7. Reduce heat to low and add remaining tablespoon of oil. Add onions and cook for 2-3 minutes until golden. Add garlic and cook for another 30 seconds. Add diced tomatoes, and stir to loosen the brown bits at the bottom of the pan. Stir in balsamic vinegar, Italian seasoning, sugar and salt. Return pork chops to the pan. Transfer to the oven, and cook, uncovered for 10 minutes or until pork reaches an internal temperature of 155F. Remove toothpicks before serving.
