When cold and flu season hits, this warming Super-Grain Soup with Watercress and Mushrooms can serve as either prevention or cure. Packed to the gills with superfoods like peppery watercress, earthy mushrooms, and nutty quinoa, it'll be just what the doctor ordered.

3 tablespoons extra-virgin olive oil, plus more for drizzling
8 ounces gourmet mushroom blend, thinly sliced (2 cups)
1 cup thinly sliced red onion (from 1 small)
Kosher salt and freshly ground pepper
1 cup super-grain blend or tricolor quinoa
6 cups low-sodium vegetable or chicken broth
1/2 cup grated Pecorino Romano Cheese, plus more for serving
2 tablespoons fresh lemon juice, plus wedges for serving
1 bunch watercress (3 ounces), trimmed and coarsely chopped

Steps:

  • Heat oil in a pot over medium-high. When it shimmers, add mushrooms and onion; season with salt and pepper. Cook, stirring occasionally, until tender and golden brown in places, 10 to 12 minutes. Add grains and cook, stirring a few times, until toasted and nutty, 2 to 3 minutes.
  • Add broth; bring to a boil, then reduce heat to medium-low and simmer until grains are just cooked, 12 to 15 minutes. Remove from heat. Stir in Pecorino and lemon juice; season with salt and pepper. Serve with watercress, a drizzle of oil, more cheese, and lemon wedges.

Super Easy Whole Grain French Bread – Cooking with Kids Recipe image

Number Of Ingredients 8

2 1/3 cup warm water
1 Tablespoon active dry yeast
2 Tablespoons sugar
1 Tablespoon salt
1 Tablespoon butter
2 ¾ cups white whole wheat flour
2 ½ cups bread flour
1 egg (beaten (used to coat loaves before baking))

Steps:

  • Combine the warm water, sugar and yeast together and let sit for 5 minutes in bread machine bowl.
  • Add all remaining ingredients except egg into the bread machine bowl. Turn bread machine to dough setting and hit start. This takes approximately 1 ½ hours.
  • When dough setting is complete, remove dough from bowl and cut into two equal pieces. Let dough rest for a few minutes.
  • Preheat oven to 170?.
  • Flatten and shape dough into rectangle using your hands. Roll the dough up lengthwise (will shape like a long cylinder), then fold the end seams under.
  • Place dough on a parchment-lined baking sheet with seam side down. Cut 4-5 angled ½ inch deep slit into the top of each loaf.
  • Brush both loaves with egg wash using a basting brush. Be sure to evenly coat the entire loaf surface of each loaf, except the bottom.
  • Place loaves in a 170? for 15 minutes.
  • While the loaves are in the oven, turn oven up to 400?. Keep in oven for 15-20 more minutes or until the tops has reached a nice golden color.
  • Turn oven down to 350? and bake for 10 more minutes.
  • Cool loaves on cooling rack.
