A delicious noodle dish with chicken and shrimp and the trademark curry flavor. You can get the fried shallots you need in this recipe in little jars at the Asian markets. They sell fried garlic as well.

16 ounces rice noodles, uncooked
4 tablespoons oil
8 ounces shrimp, peeled and deveined
8 ounces boneless skinless chicken breasts, sliced
1 tablespoon minced garlic
1 cup cabbage, sliced thin
1/2 cup carrot, julienned
2 medium tomatoes, cut into chunks
1 bunch scallion, cut into 2 inch lengths (green parts only)
1/4 bunch cilantro, chopped
1 teaspoon dark sesame oil
1/3 cup fried shallot (commercially prepared) (optional)
1 lime, cut into fourths
1 tablespoon vinegar
2 tablespoons Madras curry powder
1 pinch turmeric
2 tablespoons light soy sauce
1/2 cup vegetarian oyster sauce
2 tablespoons sriracha sauce
2 tablespoons ketchup

Steps:

  • Boil rice stick noodles for 2 minutes or until just soft.
  • Rinse under hot water and drain.
  • Toss noodles with 2 tbsp oil and keep warm.
  • To prepare sauce, mix vinegar with curry powder and turmeric until blended.
  • Add soy sauce, oyster sauce, Sriracha, and ketchup, mixing well.
  • Set sauce aside until needed.
  • Stir-fry shrimp and chicken with remaining 2 tbsp of oil until until cooked through.
  • Add garlic, cabbage, tomatoes and carrots and cook for one minute more.
  • Stir in sauce mixture until everything is evenly coated.
  • Cook for 1-2 minutes more or until dish is heated through.
  • Toss noodles with chopped scallions, cilantro and sesame oil.
  • Garnish with fried shallots, if desired.

1 pound refrigerated Asian-style egg noodles, uncooked
1 bottle (13.5 oz each) P.F. Chang's® Home Menu Sesame Sauce
1 tablespoon toasted sesame oil
2 teaspoons minced garlic
2 teaspoons minced fresh ginger
1 teaspoon sambal oelek (red chili paste)
1/2 cup chopped green onion
1 tablespoon toasted sesame seeds

Steps:

  • Cook noodles according to package directions. Meanwhile, stir together sesame sauce, sesame oil, garlic, ginger and chili paste in large bowl. Add cooked noodles and toss to coat. Sprinkle with green onion and sesame seeds and serve.

  • Place the rice noodles into a large mixing bowl. Cover with boiling water and set aside. Heat a large wok or nonstick skillet over high heat and add 2 tablespoons of the peanut oil. When the oil appears to ripple on the surface add the chicken and bacon. Stir constantly for 2 minutes. Add the pork and continue to stir for 3 minutes until the meats have lost their color and begun to brown slightly. Remove from the wok and set aside. Add the shrimp to the wok and stir constantly until they become white and brown slightly; 1-2 minutes. Do not overcook. Remove and add to the meat. Heat the remaining tablespoon of peanut oil. Add the onion and red pepper to the wok and stir fry for 3-4 minutes. While the onion and red pepper is cooking, drain the noodles in a colander. Add the garlic, ginger and jalapeno pepper; stir for 15 seconds. Add the curry powder and sugar. Stir together. Add the noodles, 3 tablespoons Tamari, 1 tablespoon fish sauce, 1 tablespoon rice vinegar and toss to coat. Tip: I find using tongs (safe for nonstick cookware) the best way to combine ingredients from this step forward. Allow noodles to cook 5 minutes, periodically tossing the ingredients in the wok. Turn off heat and toss in the scallions (some may be reserved for garnish), basil and bean sprouts. Finally toss in the remaining 1 tablespoon of each Tamari, fish sauce, rice vinegar and crushed red pepper flakes. Serve immediately.
