Steps:
- Cut the chicken into chunks and mix with the soy, then set aside. Heat the oil in a pan with a well-fitting lid, then add the ginger and onions and fry briefly. Stir in the rice. Add the veg, pour in the stock, then bring to the boil. Reduce the heat, cover and cook for 5 mins, then put the chicken on top of the rice and pour over the soy.
- Re-cover the pan and cook for a further 12-14 mins until everything is tender.

Steps:
- 1. Wash rice until clean and set aside
- 2. In a bowl, add in grated ginger, garlic along with salt, pepper, sesame oil and normal oil. Marinate the whole chicken with the mixture and rub the marinate in the cavities
- 3. Stuff the spring onion in the cavities of the chicken
- 4. In a pot, add in the washed rice, the water then place the chicken on top and cover. Cook over low medium heat for 30 minutes or until chicken and rice is fully cooked.
- 5. Once done, garnish with some chopped coriander leaves

Chicken rice generally comes in two forms - roast chicken and steamed chicken. I personally prefer the steamed chicken variation. One can find chicken rice stalls at almost every corner here in Singapore, but this recipe is special.
This is the way my mum makes it, and the way I make it. It's quick, it's simple, it's healthy and I have been thinking about it all night long. I will make this tomorrow. In the meantime, posting the recipe will have to do.
