Fereni Starch Pudding Recipe | Allrecipes image

A delightful pudding that can be eaten hot or cold, during Ramadan, particularly on sohur or iftar. Adjust both the sugar and the rosewater to taste.

Number Of Ingredients 7

? cup cornstarch
2 cups milk
6 whole cardamom seeds
½ cup ground almonds
rosewater to taste
¼ cup white sugar, or to taste
¼ cup blanched slivered almonds

Steps:

  • Dissolve cornstarch in 1 cup of cold milk.
  • Bring remaining 1 cup milk to boil with cardamom and ground almonds. Reduce heat to medium, and whisk in cornstarch mixture.
  • Add sugar and rosewater to taste. Allow the mixture to boil for about 3 more minutes on medium heat, stirring constantly. Remove cardamom seeds from the mixture and pour it into serving dishes. Garnish with slivered almonds and serve warm or cold. Enjoy!

Yield 2 cups

Number Of Ingredients 1

" drippings from roast", "2 cup stock ", "4 Tbsp corn or potato starch", "1/4 cup water"

Steps:

  • If starting with pan drippings, remove any meat and vegetables from your baking pan. Scrape up all the browned bits on the bottom and sides. Strain drippings into a measuring cup. Add stock until you have 2 cups of liquid. Pour into a saucepan and bring to a simmer. Make a slurry from the starch and water. Mix thorough to make sure there are no lumps and nothing stuck on the bottom. Once your liquid is a simmer, stir your slurry again. Slowly add to your pot while stirring your liquid. Continue stirring until your gravy is thickened and glossy. Season with salt and pepper to taste.
