2 tbsp. lowfat Greek yogurt
1 tbsp. white wine vinegar
Kosher salt and pepper
3 stalks celery
2 oz. crumbled blue cheese (½ cup)
1 scallion
1/4 c. fresh flat-leaf parsley
1 1/4 lb. Ground Chuck
4 Hamburger buns
4 piece iceberg lettuce
1/4 c. buffalo wing sauce

Steps:

  • Heat grill to medium-high. Whisk together yogurt, vinegar and ¼ tsp each salt and pepper. Add the celery, blue cheese, scallion and parsley, and toss to combine. Gently form beef into 4 balls. (Don't overwork the meat—this can result in a tough, dry burger). Flatten each ball into a 3/4-in.-thick patty. Using your thumb, make a shallow 1½-in.-wide indent in the top of each patty. Season the patties with ½ tsp each salt and pepper. Lightly oil the grill. Place the patties on the grill, indent-side facing up, and cook until the burgers release easily from the grill, 4 to 5 minutes. Flip and cook 4 to 5 minutes more for medium. Form burgers with buns, lettuce, meat, buffalo wing sauce and celery slaw.

1?½ pounds uncooked ground chicken
3 tablespoons Buffalo wing sauce
1 tablespoon vegetable oil
1 tablespoon butter, melted
¼ cup light sour cream
2 tablespoons mayonnaise
3 tablespoons crumbled blue cheese
1 tablespoon sliced green onion
4 ciabatta buns or hamburger buns, split and toasted
4 1 ounces sliced cheddar cheese (optional)
Green leaf lettuce leaves
Sliced tomato

Steps:

  • In a bowl combine ground chicken and 2 Tbsp. of the Buffalo wing sauce; mix well. Shape mixture into four 3/4-inch-thick patties.
  • In a 12-inch nonstick skillet heat oil over medium heat. Cook patties in hot oil 12 to 15 minutes or until done (165°F), turning once.
  • In a bowl combine melted butter and the remaining 1 Tbsp. Buffalo wing sauce. Brush butter mixture on both sides of patties.
  • Meanwhile, for blue cheese dressing, in a bowl stir together sour cream, mayonnaise, blue cheese, and green onion.
  • Serve patties in buns with cheddar cheese (if desired), lettuce, tomato, and blue cheese dressing.
