Ahh two of the secret ingredients are dark beer and Cocoa Chili Blend by McCormick giving this a Mole feel. All the ingredients meld together creating a dark rich sauce. Can't find the blend no worries just substitute a mix of cocoa powder, chili powder Chipotle chili powder, paprika and a touch of brown sugar. Make a large piece of pot roast for delish leftovers.

Number Of Ingredients 15

1 tablespoon flour
1/2 teaspoon black pepper
salt (remember bacon is salty)
4 lbs boneless beef chuck
2 slices bacon
2 large onions, rough chopped
3 -4 garlic cloves, mined
12 ounces dark beer (I used a bourbon barrel stout)
1 tablespoon McCormick Cocoa Chile Blend
1 chipotle chili pepper, minced
1 teaspoon raisins, chopped
1 teaspoon peanut butter
1 tablespoon dried parsley
1 teaspoon cumin
fresh parsley

Steps:

  • Mix the flour, pepper and salt together, season the roast with the flour mixture.
  • Fry bacon till crisp in a heavy cast iron pot, remove bacon from pan and set aside. Wipe pot from most of the fat.
  • Over high heat brown one side of roast. Flip then top with onions and garlic to brown the other side. About 4 minutes per side.
  • Top with the bacon bits, cocoa chili blend, chipotle chili, raisins, peanut butter, parsley and cumin.
  • Add the beer and add enough water to come about half way up the roast. You want to braise and not boil.
  • Cover tightly and simmer gently over low heat on top of the range, or in a cast iron pot place in a preheated 325 degree oven, roughly 45 minutes per pound or until the beef is fork-tender. Or place the browned roast and remaining ingredients in your crock pot on low heat for 6-8 hours.
  • The cooking liquid may be thickened with broken tortillas, flour, or cornstarch or reduced for gravy or sauce as desired. Garnish with parsley. Served over noodles, mashed potatoes or slice for an open faced sandwich.

Well, here ya go… You can produce this dish in one of two ways: 1). In the slow cooker on low, for about 8 or 9 hours, or 2). In the oven, for about 4 hours. In either case, you will have a fork-tender roast packed with great flavor. So, you ready… Let’s get into the kitchen.

PLAN/PURCHASE
THE ROAST
3-4 pound(s) chuck roast
1 tablespoon(s) olive oil, extra virgin
- salt, kosher variety, to taste
- black pepper, freshly ground, to taste
THE BRAISING LIQUID
1/2 cup(s) fresh clover honey
1/2 cup(s) bourbon
1 tablespoon(s) coconut sugar (optional)
1/3 cup(s) tamari sauce
1 tablespoon(s) worcestershire sauce
1 cup(s) beef stock, not broth

Steps:

  • PREP/PREPARE
  • THE ROAST
  • Gather your ingredients.
  • Place a rack in the lower position, and preheat the oven to 275f (135c)
  • Rub the roast down with the oil, and then sprinkle with salt & pepper, to taste.
  • Place a pot over medium-high heat, and sear the roast on all sides, about 2 minutes, per side.
  • Remove the roast, and reserve.
  • THE BRAISING LIQUID
  • Gather your ingredients.
  • Add the ingredients to the pot, and reduce heat to medium.
  • Chef's Note: Use a wooden spoon to scrape the fonds off the bottom of the pot, and incorporate them into the braising liquid.
  • Bring up to a simmer, while stirring to incorporate all the ingredients.
  • Chef's Tip: Since this braising liquid contains a lot of bourbon, when it comes to a simmer, you might want to avoid the fumes... unless you want to get drunk.
  • Return the roast to the pot.
  • Tightly cover and place in the oven until fork tender, about 4 hours.
  • Chef’s Note: If you are doing this in a slow cooker, add the seared roast, and other ingredients to the bowl of your slow cooker, and then set on low for 8 or 9 hours.
  • PLATE/PRESENT
  • Remove from the pot (or slow cooker), thickly slice, then plate with your favorite veggie and/or starch, and drizzle on some of that yummy sauce. Enjoy.
  • Keep the faith, and keep cooking.

    1. Preheat the oven to 190°C/375°F/gas 5.
    2. Bring three pans of salted water to the boil. Peel the potatoes and carrots, and scrub the beets.
    3. Cut any large potatoes in half and leave any small ones whole. Place the potatoes in one of the pans and parboil for 5 to 10 minutes, or until half cooked. Drain the potatoes, then leave them to steam dry. Return the potatoes to the hot pan and shake it around to chuff up the edges.

Scatter over the remaining garlic cloves and roast all the veg in the hot oven for about 20 to 30 minutes, giving them a jiggle every so often, or until everything is crispy, golden and delicious – about 10 minutes before they're ready, drizzle the honey over the carrots and add a lug of balsamic to the beets, then return to the oven.
