- Add rice, 1 cup water, and all other ingredients.
- Stir.
- When the cycle is almost completed check the rice. If necessary, add additional 1/2 cup water. The amount you need will depend on what kind of rice you use.

- In a large skillet over medium-high heat, cook beef, onions, pepper and celery 7-8 minutes or until no longer pink, crumble meat. Add garlic; cook 1 minute longer. Drain and transfer meat mixture to a 4- or 5-qt. slow cooker. Add next 8 ingredients., Cook, covered, on low until rice and vegetables are tender, 4-5 hours, stirring once. Top with olives and cheese before serving.

I made two different spanish rice recipes on the same day and this one had the better flavor hands down. It doesn't turn out very pretty but it has good flavor. The one thing I will say is that 1 onion and 1 bell pepper is more than plenty. That is what I did and they both still took over the rice.
