A very popular and easy snack - soft fried shrimp

200 g shrimp
1/3 cup + 3 tbsp. cornstarch
1 small egg ( ,around 50g)
pinch of salt
1/4 tsp. white pepper
oil for frying
salt and pepper for garnishing

Steps:

  • taste inside.
  • In a small bowl, crack a small egg (around 50g), then add the cornstarch in. Mix well and set aside for 10 minutes. It is very important to keep a ratio for the egg liquid and cornstarch. I have shown the texture in the picture, the batter should be slightly running but can form a thin lay on the shrimp. If you feel the batter is too thin, slightly add more cornstarch for adjusting. To prevent drying the batter, add only a small batch each time (recommend 1 teaspoon each time)
  • Place the shrimp in and mix well.
  • Heat around 1 and 1/2 cup of oil in a small pot until really hot, over 150 degree C. Then fry the shrimps by three batches until golden brown.

0.5 pound Medium Shrimp
6 Soft Shell Crab
2 loaf French Bread
1 1/2 cup Self-Rising Flour
1 teaspoon Salt
2 teaspoon Cayenne Pepper
1 1/2 teaspoon Garlic Powder
2 tablespoon Tartar Sauce
2 cup Water
1 head Lettuce
1 Tomato
to taste Salt and Pepper
to taste Frying Oil

Steps:

  • Mix the Self-Rising Flour (1 1/2 cup), Cayenne Pepper (2 teaspoon), Salt (1 teaspoon), Garlic Powder (1 1/2 teaspoon) together and prepare the Water (2 cup) in a bowl.
  • Dip Medium Shrimp (0.5 pound) into the water, then coat with flour. Repeat twice for each shrimp. Repeat the same process with the Soft Shell Crab (6).
  • Place a sufficient amount of Frying Oil (to taste) into a pot over medium high heat. Deep fry in a pot until golden brown and set aside to drain excess oil.
  • Cut French Bread (2 loaf) in half and spread Tartar Sauce (2 tablespoon) on one side. Top with Tomato (1) and Salt and Pepper (to taste). Top with Lettuce (1 head).
  • Top the two buns with your fried shrimp and/or soft shell crab.
  • Top with other half of bun and enjoy!
