Steps:
- Preheat oven to 350° and line a large cookie sheet with parchment. In a large bowl, mix flour, walnuts, granulated sugar, salt, and vanilla. Add butter and, using your hands, combine everything until mixture resembles a coarse meal. Form dough into small balls and place on prepared cookie sheet. Bake 15 minutes. When they’re still warm but cool enough to touch, roll cookies in powdered sugar. Set aside on a rack to cool completely. When cool, dust again in powdered sugar.

- Preheat your oven to 300° and line a baking sheet with parchment paper. Combine melted butter, egg, stevia, and vanilla extract in a large bowl and set aside. Add walnuts to a food processor and pulse until ground. Pour walnut flour into a medium bowl and add coconut flour and 1/4 cup Swerve and pulse until combined. In two parts, add dry mixture to the wet and whisk to combine. At this point the dough should be soft but firm enough to form into balls by hand without it sticking to your palms. If it is not the right consistency add 1 to 2 tablespoons of additional coconut flour and combine. Make 15 equal sized balls and arrange on prepared baking sheet. They will not spread in the oven. Bake for 30 minutes. Allow to cool for 5 minutes, and then roll the (still warm) balls in the remaining 1/4 cup Swerve. Place them back on the parchment paper and allow to full cool, another 20 to 30 minutes, before eating.

- in a large mixing bowl add 1 cup softened butter, 3/4 cups confectioners sugar and vanilla. with a spoon mix until creamy. Once mix is creamy, slowly add 2 cups flour and 1 cup finely chopped nuts,(optional) Shape into 3/4 inch balls, rolling in palm of hand. place 1/2 inch apart on ungreased cookie sheets. bake in oven at 300 degrees for 25-30 minutes or until cookies are a cream color. remove from cookie sheets and place on cooling rack until cookies are just warm to the touch, then roll the cookies in the 1 cup extra sifted confectioners sugar, cool entirely and roll again in the same confectioners sugar. store in tightly covered container
