A light, airy raspberry bar cookie that melts in your mouth. (Believe I originally found this recipe on a can of Crisco many years ago.)

Prep Time 25 minutes

Cook Time 40 minutes

Number Of Ingredients 8

3/4 cup Crisco
3/4 cup sugar
1/4 teaspoon salt
1/4 teaspoon almond extract
2 eggs, separated
1 1/2 cups flour
1 cup raspberry preserves
1/2 cup flaked coconut

Steps:

  • Preheat oven to 350 degrees.
  • Cream Crisco, salt and 1/4 cup of the sugar until fluffy.
  • Blend in almond extract, egg yolks.
  • Mix in flour. (Flour should be sifted before measuring.).
  • Pat dough into ungreased 13" x 9" x 2" pan.
  • Bake 15 minutes.
  • Spread hot crust with preserves; top with cocunut.
  • Beat egg whites until foamy; gradually beat in the remaining 1/2 cup of sugar until stiff peaks form.
  • Spread egg-white mixture over coconut.
  • Bake 25 minutes.
  • Cool completely on rack.
  • Cut into 2 dozen bars.

1/2 cup(s) butter
1/2 cup(s) sugar
2 - eggs, lightly beaten
1 teaspoon(s) vanilla
1 1/2 cup(s) miniature marshmallows
1/2 cup(s) coconut
2 cup(s) vanilla wafer crumbs
FROSTING
4 ounce(s) cream cheese,softened
2 tablespoon(s) butter
1 teaspoon(s) vanilla
1 1/2 cup(s) confectioners' sugar

Steps:

  • In a saucepan; melt butter, add sugar, lightly beaten eggs and coconut. Cook over low heat until thickened. Remove from heat, add vanilla and cool. Add remaining ingredients, spread in a 9 inch pan and chill.
  • When cool, frost with cream cheese icing.
  • Icing: Blend the cream cheese, butter and vanilla, beat till smooth and creamy. Mix in the confectioners' sugar, more if needed for desired consistency. **** Prep time includes cooling time.
