These Small Batch Almond Joy Cookies are the perfect blend of coconut, semi sweet chocolate and sliced almonds. They can be baked and frozen ahead of time.

Number Of Ingredients 11

1 1/8 cup(s) all purpose flour (1 cup plus two tablespoons)
1/2 teaspoon(s) baking soda
1/4 teaspoon(s) salt
1/2 cup(s) butter softened (1 stick)
1/3 cup(s) sugar
1/3 cup(s) brown sugar
1 teaspoon(s) vanilla extract
1 large egg
1 1/2 cup(s) semi sweet chocolate chips
1 cup(s) sweetened coconut flakes (shredded coconut)
3/4 cup(s) sliced almonds

Steps:

  • Preheat oven to 375 degrees
  • In small bowl whisk to combine flour, baking soda and salt. Set aside.
  • Using mixer cream butter and sugars. Add vanilla and egg and mix just until incorporated. Slowly blend the dry mixture into the creamed mixture. Stir in chocolate chips, coconut flakes and sliced almonds.
  • Using 1 1/2 tablespoon cookie scoop drop by rounded spoonfuls onto parchment covered cookie sheets. Bake for 9-12 minutes. Allow to cool for ten minutes before moving to cookie cooling racks.
  • Makes 24-26 cookies I had a reader report that you need to keep an eye on these cookies starting at 9 minutes. That they really start to brown up fast. I have not had a chance to remake these cookies since I purchased a new oven.

Number Of Ingredients 12

1 cup butter, softened
6 ounces cream cheese, softened
2 cups all-purpose flour
FILLING:
6 ounces almond paste, crumbled
2 large eggs, lightly beaten
1/2 cup sugar
FROSTING:
1-1/2 cups confectioners' sugar
3 tablespoons butter, softened
4 to 5 teaspoons milk
Maraschino cherry halves (about 48)

Steps:

  • In a large bowl, cream the butter and cream cheese until smooth. Gradually add flour until well blended. Refrigerate for 1 hour. , Shape into 1-in. balls. Place in ungreased miniature muffin cups; press onto the bottom and up the sides to form a shell. , For filling, in a small bowl, beat the almond paste, eggs and sugar until blended. Fill each shell with about 1-1/2 teaspoons filling., Bake at 325° for 25-30 minutes or until edges are golden brown. Cool for 10 minutes before removing to wire racks to cool completely. , For frosting, combine the confectioners' sugar, butter and enough milk to achieve desired consistency. Pipe or spread over tarts. Top each with a cherry half.
