SOFT BEER PRETZELS RECIPE: HOW TO MAKE IT

- In a small saucepan, heat beer to 110°-115°; remove from heat. Stir in yeast until dissolved. In a large bowl, combine butter, sugar, 1-1/2 teaspoons salt, yeast mixture and 3 cups flour; beat on medium speed until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Preheat oven to 425°. Punch dough down. Turn onto a lightly floured surface; divide and shape into 8 balls. Roll each into a 24-in. rope. Curve ends of each rope to form a circle; twist ends once and lay over opposite side of circle, pinching ends to seal., In a Dutch oven, bring water and baking soda to a boil. Drop pretzels, 2 at a time, into boiling water. Cook 30 seconds. Remove with a slotted spoon; drain well on paper towels., Place 2 in. apart on greased baking sheets. In a small bowl, whisk egg yolk and water; brush over pretzels. Sprinkle with coarse salt if desired. Bake until golden brown, 10-12 minutes. Remove from pans to a wire rack to cool. , Freeze option: Freeze cooled pretzels in freezer containers. To use, thaw at room temperature or microwave each pretzel on high until heated through, 20-30 seconds.

Steps:
- Wash ginger root but do not peel. Chop roughly and process in food processor until reduced to a textured paste. Put ginger in a large non reactive container and pour boiling water over it. Stir in the lime juice, zest and cream of tartar. Cover and stir occasionally as mixture cools. When lukewarm, mix the yeast with the warm water, pressing out lumps, and add to container. Cover and let stand for 6 hours. Stir the sugar into the ginger beer until completely dissolved and immediately pour into sterilized bottles, making sure the stoppers are well sealed and airtight. The ginger beer will keep for 3 to 4 days in a cool place. To keep longer, add rum.
- To serve, strain and pour into glasses (over shaved ice if desired), with a sprig of mint and thin slice of lime.

Put the gammon in a large pan and add the onion, carrots, peppercorns, cinnamon sticks and bay leaves. Pour over the ginger beer and top up with enough water to cover the gammon. Bring to the boil, skimming off any impurities. Simmer for 1 hour and 15 minutes, topping up with boiling water if the pork starts popping out. Remove from the heat and leave to cool in the liquid for 1½ hours.
Preheat the oven to 190°C/gas mark 5. Remove the gammon and transfer to a board. Remove the skin and score the fat into diamonds.
In a small saucepan, heat the honey, sugar, cinnamon and orange juice over a low heat, then increase the heat and simmer until it becomes syrupy.
Line a roasting tin with foil and transfer the gammon on to it. Add the quartered oranges. Brush half the glaze over the fat of the gammon then roast in the oven for 45 minutes, brushing the remaining glaze over it halfway through.
